Cornbread Sloppy Joe

After having my first taste of sloppy joe as a kid, I was immediately hooked! The delicious beefy and sweet mixture on a bun brings back so many great memories. So, why not make it on the grill? This cornbread sloppy joe recipe had savory ground beef, veggies all topped with a sweet cornbread mix. Simple, yummy comfort food. This one pan meal is ready in minutes.

Step 1: Prepare the ingredients

This cornbread sloppy joe recipe cooks in minutes, so I recommend getting all the ingredients prepped and ready to mix.

For the veggies I used a red bell pepper, yellow onion and minced garlic. Alternative veggies include carrots or hot peppers. It’s all up to you. Dice them into small cubes and set aside.

Next, it’s time to make the sloppy joe sauce. In a mixing bowl, add a can of tomato paste, Worcestershire sauce, yellow mustard, brown sugar and Dad’s All Purpose rub. Whisk the ingredients together and set aside.

Step 2: Sautee the ingredients.

Bring the grill to a high direct heat. Stove top and oven will work just as well. Place the skillet on the grates and place the entire beef block onto the skillet to build a crust on the bottom. Season with Dad’s All Purpose rub and start to break apart the ground beef block. Continue turning until the meat is fully cooked.

Next, drop in the chopped veggies continue mixing until soft and pour in the sweet tomato sauce.

And finally mix the cornbread. I went with a pre-made cornbread mix that needed only a few ingredients. It’s simple and fast to make. Famous Dave’s cornbread mix is a family favorite.

If you have a homemade recipe, I highly recommend using that. For convenience and time management, I decided to go with the boxed version and I can’t complain.

Leaner alternatives for ground beef are ground chicken, turkey or pork. Adjust based on your dietary preferences.

Step 4: Grill the Cornbread Sloppy Joe

Preheat the grill to a high heat at 400 degrees. Once you start adding the ingredients, the cooking process will go fast.

Place a cast iron skillet on the grill to heat it up. First add a block of ground beef on the skillet and leave it whole for a minute to a nice crust. Next, start breaking down the ground beef and cook through. Add in the chopped veggies and stir them with the meat. Allow the veggies to soften a bit before the next step. You want a little bit of crunch for texture.

Finally, it’s time to add the cornbread. Move the cast iron skillet to the indirect side. Cover the top of the filled skillet with the corn bread batter. Do not mix with the meat.

Thinly slice a green bell pepper into long strips or a jalapeno into thin rings. Place it onto the raw cornbread mix. This is for decoration purposes only.

Grill for about 20 minutes until the cornbread is golden brown in color.

Scoop out a generous portion of the cornbread sloppy joe and enjoy!

For aesthetics, you can slice a few thin strips of bell pepper or jalapeno rings and place them on top of the cornbread.
