You can make smoked brownies any time you want to; just gather the ingredients and start up your pellet grill. We have served these brownies at cookouts for the big game, and they make a rich, delicious treat for anniversaries and Valentine’s Day.
Smoked Brownies Ingredients

- Unsalted butter
- Granulated white sugar
- Unsweetened Dutch cocoa
- Espresso powder
- Eggs
- Vanilla extract
- Salt
- All-purpose flour (sifted preferred)
- Chopped semisweet chocolate (sub with dark, milk, or white chocolate if desired)
Toppings
- Vanilla (or your favorite flavor) ice cream
- Caramel sauce or ice cream topping (butterscotch and chocolate also work!)
- Candied bacon or chopped nuts (optional)
Needed for baking
- 8″ square disposable aluminum pan
- Butter or cooking spray for greasing
Prep work
- Let the 3 eggs sit at room temperature for 30 minutes before cracking them. This is a necessary step for baking amazing brownies.
- Preheat your pellet grill to 350°F. Use cherry or apple wood pellets for this smoked brownies recipe.
- Take an 8-inch baking pan and mist with cooking spray.
- Cut parchment paper to fit the pan, then fit it to the pan.
Making the brownie batter
- In a medium saucepan, melt butter over medium heat on the stovetop.
- Once melted, promptly remove from heat, and transfer to a bowl. Whisk in granulated sugar, espresso, and unsweetened Dutch cocoa powder. Whisk for 20 seconds.
- Add the eggs one at a time, then vanilla and salt. Continue whisking.
- Slowly stir in all-purpose flour, then add chocolate chips to the brownie batter.
- Pour the batter into the parchment-lined pan and smooth out evenly.
Brownies in the smoker
- Place the pan in your smoker, close the lid, and cook for 35-38 minutes. Test for doneness using the toothpick method. If it comes out watery, it needs to spend more time in the smoker. If it comes out with a few brownie bits, it’s done.
- Resting and Serving
- Using heat-resistant gloves, remove the pan of smoked brownies from heat and let them cool for 45-50 minutes. They will have some warmth but will not be hot.
- Cut into serving sizes and enjoy them as is, or top each brownie with a scoop of ice cream, a dollop of caramel sauce, and dust with finely chopped candied bacon.
- Store leftover smoked brownies in an airtight container in the refrigerator for 10-12 days. Freeze in vacuum-sealed bags for up to 4 months.
Oven baking
If you don’t own a smoker, that’s okay! You can make these decadent smoked brownies (without the smoked) in your oven. They won’t be smoky, but they will be indulgent!
- Simply bake the brownies in a preheated 350-degree oven for 35-40 minutes until they pass the toothpick test.
- Let them rest for an hour, and serve with vanilla ice cream and caramel sauce.
Please note that every grill or smoker works differently. Cooking times for smoked brownies can be faster or slower based on equipment and several other factors, including weather, ingredients, and elevation.
