Preheat the grill to a high 400 degrees and dual zone grilling.

Whenever I’m cooking protein hot and fast, I like to have my grill set up for 2 different heat distributions. The reason for this is, if the meat is too thick, but the outside sear is getting too dark, I move it to the indirect side to finish cooking without burning it.

Start my placing the seasoned and brined pork chops on the direct side. Flip every minute until you build a nice sear on all sides. This should take anywhere from 8-10 minutes, depending on the size of the pork.
