Pork steaks are typically cut from the pork shoulder, also known as pork butt. Because pork shoulder contains plenty of marbling and connective tissue. It has a rich pork flavor and stays juicy when cooked properly. That extra fat is exactly what makes them so good on the grill.
Mostly known and cooked in the St Louis style in which the steaks are grilled and braised in BBQ sauce.
You can find pork steaks cut thin or thick. For this recipe, I prefer steaks that are around ¾ to 1 inch thick because they cook relatively quickly while still staying juicy.

Grill the Pork Steaks

The key to great grilled pork steaks is getting a good sear without drying out the meat. A flavorful seasoning blend, a hot grill, and careful temperature control are all you need to turn these affordable pork steaks into a seriously delicious meal.
For this recipe I used Dad’s Sweet BBQ rub to balance all the savory flavors of this recipe. Another option is Dad’s All Purpose rub which has the perfect blend of savory salt, pepper, paprika and garlic flavors.
Start by drizzling some olive oil over the pork steaks and then season with your choice of seasoning.

Preheat the grill to a high heat or 400 degrees and set for dual zone grilling. For this recipe, you will need to direct heat for the sear, and indirect side for the braising.
How to create an indirect heat set up on the grill

Indirect heat is created differently depending on the type of grill you have.
- Gas grill: Turn the burners on one half of the grill. For indirect heat, place food on the opposite end.
- Charcoal grill: position the heated charcoal to one half of the round bowl. For indirect heat, place the food on the opposite end.
- Komodo style grill: use a plate setter that will deflect direct heat from the food on the grates.
Place the seasoned Pork Steaks on the direct side first and grill 1 minute per side and then flip. Repeat every minute until you get nice color on all sides.
Time to Braise the Savory Grilled Pork Steaks

While the pork steaks are on the grill, roughly slice a few bell peppers and onion. Transfer the Grilled Savory Pork Steaks to a foil pan and add in the veggies. Next add some minced garlic, Worcestershire sauce and cover the bottom with beef broth. Cover the pan with aluminum foil and put it back on the grill on the indirect side.
The steaks will braise in the broth, tenderizing the meat. After 30 minutes check for fork tenderness. The meat should be almost falling apart. If not, seal it up again, continue cooking and check again in 30 minutes. Depending on the size of the pork steak and the grill you are using, this can take anywhere from 30-60 minutes.
There is no internal temperature needed, just tenderness.
When ready, remove them from the hot grill and let the meat rest.

- 2 Pork steaks (bone-in)
- 1 tbsp Olive oil
- 2 tbsp Sweet BBQ rub
- 2 Bell peppers
- 1 Yellow onion
- 1 tbsp Minced garlic

Coat the pork steaks withe olive oil and season on both sides with the bbq rub.
Preheat the grill to a high heat or 400 degrees and set for dual zone grilling.
Place the seasoned Pork Steaks on the direct side first and grill 1 minute per side and then flip. Repeat every minute until you get nice color on all sides. Remove from the grill and place them in a foil pan.
Cut the bell peppers and onion into strips and place on the pork steaks.
Add the minced garlic, Worcestershire sauce, beef broth and cover the pan with alumminium foil. Place it back on the grill on the indirect heat side.
After 30 minutes check for tenderness. The meat should be almost falling apart. If not, seal it up again, continue cooking and check again in 30 minutes.
Once done, remove from the grill, rest 5-10 minutes and serve. Enjoy!
