  • Tortilla: large flour burrito tortillas are used a dividers similar to a lasagna.
  • Veggies: I used colorful veggies to add brightness and flavor to the recipe. Red bell pepper, jalapeno and red onion.
  • Seasoning: an equal blend of Taco seasoning for the traditional Mexican flavors and an All Purpose rub to the savory notes.
  • Garlic: adds a nutty flavor that compliments the protein and crisp veggies.

How to Make Grilled Tortilla Beef Kebabs

Prep the Beef

For this Grilled Tortilla Beef Kebab recipe, I used a ground chuck roast with an 80/20 lean to fat ratio. This delivers on flavor and juiciness. However feel free to use any cut of beef. Alternative proteins can work here as well! An equal mix of pork and beef, or turkey for a leaner version. Adjust this recipe to your food and lifestyle preferences.

In a large mixing bowl, add 2 lbs of ground beef, diced red onion, jalapeno and red bell pepper. Add in chopped parsley, minced garlic or garlic and season with Dad’s All Purpose Rub for the savory notes that compliment the beef and Dad’s Taco seasoning for the traditional cumin and paprika flavors you would expect from a Mexican dish.

Mix it all together and set aside.

Prepare the Tortillas

Extra large burrito flour tortillas work best for this recipe. These will produce 4 staked Grilled Tortilla Beef Kebabs.

Take 6 tortillas, stack one on top of the other and cut them into even squares.

Add a handful of the beef mixture onto the first tortilla and spread it thinly across the entire surface. Top if with a new tortilla and repeat the process until you run out of tortilla’s or meat.

Before you skewer the Grilled Tortilla Beef Kebabs, you need to slice equal width rows. Based on the size of the burrito tortilla’s, you should be able to get 4 separate columns.

For evenly spaced rows, cut down the middle first and then each half down the middle again.

Carefully, insert the skewer into each row securing the tight layers. Slice between each skewer to separate.

Preheat your grill to medium-high heat. Place the kebabs directly over direct heat and grill for about 8-10 minutes, turning every 1-2 minutes.

Rotating the kebab frequently prevents the tortilla’s from charing.

Make sure to check the internal temperature of the beef. While the outside might look done, because the layers are tightly packed, the inside might need a few more minutes on the grill. Remove once the beef reaches 145-150 degrees Fahrenheit. The edges will be golden and crispy and the inside fully cooked.

In a blender add Mexican crema, sour cream, fresh cilantro, chopped jalapeno, freshly squeezed lime juice and Dad’s Taco seasoning. Blend the ingredients together until everything is purified and smooth.

Instructions

  • In a large mixing bowl add ground beef, diced red onion, jalapeno and red bell pepper. Add in chopped parsley, minced garlic, All purpose and Taco seasonings. Mix the ingredients together and set aside.
  • Stack the burrito tortillas and cut off round sides shaping it into a square.
  • Add a handful of the beef mixture onto the first tortilla and spread it thinly across the entire surface. Top if with a new tortilla and repeat the process until you run out of tortilla's or meat.
  • Slice the stacked tortillas down the middle and then each half down the middle again that results in 4 evenly shaped chunks.
  • Flip each chunk over with the meat side facing up and the tortilla side facings sideways.
  • Insert skewers carefully through each rectangle to secure the layers. Slice between the skewers.
