  • Peach cider – sub with peach juice or nectar
  • Apple cider – sub with apple juice
  • Apple cider vinegar

  • Worcestershire sauce

Step-by-step instructions

  • Simmer recipe ingredients in a medium saucepan over medium heat for 2-3 minutes.
  • Remove the pot from the heat and allow the marinade to cool for 45-60 minutes before using.

  • Prepare and trim the pork roast or ribs as directed.
  • Draw some of the peach injection marinade liquid into the syringe.
  • Carefully insert the needle into the pork roast about 1 1/2″ deep.
  • Slowly inject a small amount of the injection solution into the meat.
  • If some of the marinade spills out, gently wipe it away with clean paper towels and repeat the injection steps in several different spots in the roast.
  • Cover the meat tightly with plastic wrap, and place it into the refrigerator for 8-12 hours.
  • Once marinated, unwrap the pork and place it onto a cutting board or baking sheet. Season with your favorite BBQ spice blend, and let stand for 45-60 minutes at room temperature before cooking.
  • Discard any remaining injection marinade that has come into contact with the raw meat via the injector.

Tip:

Make this peach injection marinade up to 5 days in advance, and store it in an airtight container until ready to use. Let it stand at room temperature for at least an hour before using it, or microwave it for 30 seconds to bring the temperature up. Keep in mind that the mixture should be tepid, not hot.
