Smoked Three Cheese Corn Pudding

This Southern side dish is a family favorite and something we like to serve at BBQs and get-togethers.

It’s super easy to prepare, and you can throw it in the smoker with your BBQ, and you’ll be eating well in no time.

Smoked Three Cheese Corn Pudding

Ingredients you’ll need

  • Creamed corn
  • Sweet canned corn
  • Cornbread mix – Jiffy is my favorite and is readily available everywhere
  • Sugar
  • Egg
  • Sour cream
  • Butter
  • Shredded cheese – Cheddar, Pepper Jack and Gouda are a good combination.

Equipment you’ll need

  • Smoker
  • Mixing bowl
  • Rubber Spatula
  • Baking dish – or cast iron pan

How to Make Smoked Three Cheese Corn Pudding

1. Fire up the smoker

Preheat your smoker to 350°F.

2. Combine

In a mixing bowl, combine all of the ingredients together.

I like to use a rubber spatula and fold in everything until it’s well incorporated.

Once the corn pudding is mixed together, pour it into an 8×8″ baking dish or a 10″ cast iron pan.

I like both options here. If you like the crusty edges, a cast iron pan might be the better choice.

3. Cook

Place the corn pudding into your smoker at 350°F for 40 minutes.

The pudding will rise some and firm up, and the center should still be soft but hold together.

You can check the doneness by sticking a toothpick in the center. The toothpick should come out with a little filling stuck to it, but if the whole thing is covered, you may need to cook for a bit longer.

If you want the dish extra cheesy, you can opt to put a little more shredded cheese on top of the corn pudding near the end and smoke for an additional 5 minutes to get it melted. It will form a nice crust.

How to store

Place the corn pudding in an airtight container and refrigerate.

You can store the corn pudding for up to 5 days.

To reheat, microwave or place in a preheated oven at 350°F until it is warmed through.

Ingredients

  • 14.75 oz creamed corn
  • 14.75 oz sweet canned corn
  • 1 box Jiffy cornbread mix
  • 2 tbsp sugar
  • 1 egg
  • 8 oz sour cream
  • 1 stick butter melted
  • 4 oz cheddar shredded
  • 4 oz Pepper Jack shredded
  • 4 oz Gouda shredded

Instructions

  • Heat the smoker to 350°F.
  • Place all ingredients in a large bowl and mix well to combine.
  • Pour ingredients into an 8×8" baking dish or 10" cast iron pan and smooth the top so it’s level.
  • Place in the smoker for 40 minutes. The corn pudding will rise some and should be light golden brown. Allow the dish to cool for 5 minutes before serving.
