  • Breakfast sausage: sweet, savory pork breakfast sausage for some protein.

Cook Everything on the Griddle

This easy and delicious Ultimate Breakfast Burrito is the perfect recipe to meal prep. Make a large batch, store in the fridge and reheat every morning for a high protein breakfast.

I made this recipe on my griddle, but it can easily be replicated on the stove top using the same measurements and temps.

Ingredients on the griddle.

Start by preheating the griddle and spreading some olive oil on the surface. Start by dumping an entire 30oz bag of frozen shredded hash browns. Spread the apart. This will help cook faster and build a nice crispy crust everywhere. Season with salt. Cook for the hash browns for about 2 minutes and flip. Repeat and continue to cook and flip until you get nice light brown crispy edges.

Remove it from the grill into a bowl.

Next, place some breakfast sausage on the grill. If your cooking surface is large enough, you can do it while the hash browns are on. Break it down until you have some crumply pieces. Flip and continue to cook until you build a nice crust. DON’T skip this step. The crust is crucial!

The final ingredient for The Ultimate Breakfast Burrito are the eggs. The secret to making the best fluffy eggs are 1 tablespoon of milk to 1 egg ratio. In a bowl, whisk the eggs and milk together and pour it on the hot griddle.

Assemble the Breakfast Burrito

Once all the ingredient components are cooked, it’s time to finally assemble The Ultimate Breakfast Burrito.

There are a few final pieces before we can begin assembling the meal. First, add an entire back of shredded cheddar into the bowl with the cooked ingredients and season with Dad’s All Purpose seasoning. Gently fold everything together.

Next, while the griddle is still hot, toast up the tortilla’s. This will help prevent any tearing while we wrap.

Wrapping the ultimate breakfast burrito.

Place a very generous amount of the breakfast mixture onto one side of the toasted tortilla. You want that this burrito to be packed. Next, start rolling it over folding in the sides.

Finally, toast The Ultimate Breakfast Burrito. Place the rolled burrito seam-side down on a hot skillet or griddle. Keep it down for 1-2 minutes and flip to toast for a golden brown color all around.

Sprinkle some hot sauce over the top and bite in.

Frequently Asked Questions:

Can I make them vegetarian?

YES! Skip the breakfast sausage and add beans for extra protein.

Can I freeze the burrito’s?

Absolutely! This is one of my favorite meal prep solutions. Make a batch, tightly seal in aluminum foil and a ziplock bag and place in the freezer. Before eating, re-heat in the microwave for a minute and then toast in the toaster or on a skillet.
