Try this ultimate brisket mop on your next smoked brisket! It’s quick and easy to make and a great way to add flavor and extra moisture to the meat.
This brisket mop is one of our go-to’s for smoked brisket and beef roasts. We’ve also used it on venison or wild boar. Use it “mop-style,” or add it to a kitchen-safe squirt bottle and use it like a BBQ spritz.
Why use a brisket mop?
Mopping adds moisture to beef brisket, but most importantly, it adds flavor. This process takes place during the second half of cooking when the bark has fully formed. Keep in mind that a good mop should be thin and runny, not thick like barbecue sauce. As always, warm the brisket mop to 140 degrees F/60 degrees C. to prevent dropping the meat’s core temperature.
How to use a brisket mop
Gently blot the mop mixture on the brisket and allow it to form a crust on the meat. Avoid brushing vigorously. You can also spritz the mixture on the brisket rather than applying it with a mop brush. Repeat the process as needed. Stop using the mixture during the last hour of the cooking to form a nice crust.
Ingredients
- White vinegar (sub with apple cider vinegar)
- Olive oil (or avocado oil)
- Worcestershire sauce
- Water
- Brown Sugar (dark brown recommended, omit if you’d like a savory mop)
- Brisket rub
- Soy sauce (or Tamari)
- Garlic
Making a brisket mop
- Assemble: Combine the brisket mop mixture in a medium microwave-safe bowl. Heat in the microwave for 1 1/2 minutes. Let the mixture stand for 5-10 minutes to allow the sugar to dissolve and cool to a bit. Stir before using.
- To use: Mop (or spritz) on smoked brisket during the second half of cooking every 60-90 minutes, or as needed. Discard remaining mop after use.
- Storing it: Make the ultimate brisket mop ahead of time and store it in an airtight container in the refrigerator for 3-4 days after preparation. Reheat to 140 degrees F on the stovetop or in the microwave before using it.

- 1 cup white vinegar
- 1/3 cup water
- 1/4 cup Worcestershire sauce
- 1 /4 cup olive oil
- 1/4 cup brown sugar (omit if you want it savory)
- 2 tablespoons rub used on brisket
- 1 tablespoon soy sauce
- 2-3 cloves garlic, minced
Combine mixture in a medium bowl. Heat in the microwave for 1 1/2 minutes, and stir through. Let mixture stand for 5-10 minutes before using.
To use, brush or mop on to brisket halfway through cook time. Do so at least three to four times during cooking process. Discard remaining mop after use.
If making ahead of time, store in an airtight container in the refrigerator for 3-4 days after preparation. Reheat before using on brisket.
