4. Texas Style Smoked Beef Short Ribs

These massive, tender ribs are as far from “short” as it gets. They take longer than pork ribs, but the payoff is worth every minute.

Spatchcocking is a great BBQ option, you get more surface which means more rub, and cook time is a lot faster.
