If you’re looking for an easy and delicious recipe for the grill, then you have to try these bacon-wrapped chicken skewers. All you’ll need is skinless, boneless chicken thighs or breast, bacon, and a delicious BBQ poultry rub!
I grilled these chicken skewers on a kamado grill, but you can certainly cook them on a gas or pellet grill, or in an air fryer. However, grilling these skewers over charcoal infuses them with a delicious kiss of smoky flavor.
Ingredients
- 1 pound boneless, skinless chicken thighs or breast
- Poultry BBQ Rub
- 12 ounces of bacon
- Metal or wooden bamboo skewers
While you can use chicken or even turkey breast for this recipe, I highly recommend using chicken thighs instead. Not only are they a more affordable option, but once cooked, the meat is juicy, tender, and flavorful.

Preparing the Grill
As mentioned earlier, I used our Big Green Egg XL kamado grill for this recipe. Create a two-zone fire by placing the hot coals on one side. We’ll stay off on the hot side to get a nice sear on the bacon before moving the skewers to the cooler side to prevent them from burning.

Preparing the Chicken
- Trim off excess visible fat from the chicken thighs, and cut them into 2″ chunks and place them in a medium-sixed bowl.
- Next, season them with your favorite bottled chicken rub.
- Gently combine until all of the seasonings are well distributed. Let it stand for 10 minutes.



Wrapping and Skewering
- Cut bacon slices in half.
- Place one piece of chicken in the center of bacon half, roll them up, and slide them onto a wooden or metal skewer.
- Repeat the process with 5-6 bacon-wrapped chicken pieces on each skewer.


Grilling the Skewers
- Once pre-heated, place the skewers on the grates over direct heat. Cook for 2 minutes per side.
- Next, move them over the indirect cooking side, close the lid, and coon them for 20 minutes, or until they reach an internal temperature of 170-175 degrees F.
- Transfer the skewers over direct heat once more, and sear them for 1-2 minutes per side.
- Remove from the grill and let them cool for 5 minutes before serving.
What to Serve With Bacon-Wrapped Chicken Skewers
You can serve these simple, delicious skewers as part of a meal or as appetizer chicken bites. Pair them with side dishes and sauces such as:
Storing Leftovers
Remove the bacon-wrapped chicken from the skewers and store them in an airtight container in the fridge for up to 3 days. You can also freeze them for up to 8 weeks. The consistency of the bacon might change after freezing. Reheat in the microwave or an air fryer at 350 degrees F.
Recipe Alternatives
- Use different flavored bacon, like black pepper or hatch chili bacon.
- Apply warmed pepper jelly, BBQ sauce, or homemade rib candy to the skewers a few minutes before taking them off the grill.

Cook the skewers in the oven or air fryer at 375 degrees F for 20-25 minutes, turning halfway through.
