This flavorful Brazilian barbecue rub is adapted from the popular Bahian spice blend known as Tempero Baiano. The combination of earthy, savory spices makes this homemade rub ideal for beef.

What is Tempero Baiano?
Tempero Baiano seasoning comes from the northeastern state of Bahia, Brazil, and combines indigenous and African culinary traditions. This spice mixture is made up of earthy, aromatic spices used to flavor grilled or smoked meats, and contains ingredients such as black pepper, onion, garlic, and cinnamon. Some variations call for turmeric, saffron, and dried marjoram. The key point to remember is that tempero baiano is versatile and often used to flavor marinades, soups, stews, and vegetables.

ingredients
- Paprika
- Cumin
- Coriander seeds
- Dried Cilantro (sub with dried marjoram if needed)
- Cinnamon
- Salt (Brazilian salt for Churrasco)
- Black pepper
- Onion Powder
- Granulated garlic or garlic powder
- Cayenne
Making the rub
Combine the herbs, spices, and salt in a bowl. Use it right away, or store in an airtight container for later use. Make a large batch and store it in a cupboard for up to 1 year. Examine it periodically for clumping, which is more likely to occur in humid climates.

How to use Brazilian barbecue rub
As mentioned above, you can use this dry rub most recipes, but it works well on grilled steak and large roasts cooked over low-temperatures. Try this rub on a Tomahawk Steak or picanha. While picanha is traditionally seasoned with salt, this spice mixture will add a depth of flavor. Use this Brazilian rub on grilled pork chops or smoked pork shoulder.
How to Make a Marinade using Tempero Baiano
For 1-1 1/2 pounds of meat: combine 2 tablespoons of rub with 1/4 cup oil and 1/4 cup fresh citrus juice or vinegar. Whisk together and use.
Marinating times:
- Beef for 4-12 hours
- Pork for 3-6 hours
- Chicken and other poultry for 2-4 hours
- Vegetables, fish, and seafood for 15 minutes
