Carolina is regarded as the birthplace of barbecue in the United States. This regional style emphasizes cooking pulled pork and whole hog. Pitmasters apply a simple rub to the meat, cook it at low temperatures for an extended period, basting it periodically with a vinegar mop or spritz.

This fantastic Carolina-inspired pulled pork spice rub modifies easily. Alter the amount of cayenne called for in this recipe. Increase it up for spice lovers and tone it down for those who aren’t.

  • White sugar (granulated sugar)
  • Black pepper
  • Chili powder
  • Sea salt
  • Mustard powder
  • Cayenne pepper

Making the rub

This Carolina pulled pork rub is super easy to make, and takes just minutes to assemble!

Simply, place the rub ingredients into a medium-sized bowl and whisk them together. Use immediately or it store in an airtight container in a cupboard for later use.

How much Carolina pulled pork rub to use

  • Use 1 tablespoon of rub per pound of meat. For instance, a 8-9 pound bone-in pork roast will require roughly 1/2 cup of rub.
  • Use a binder for easy application: Apply a thin layer of yellow mustard to the pork shoulder before applying the rub. I will do this 50% of the time, but it depends on the rub I’m using and the flavor profile I’m after.
  • Apply the rub by hand, as pictured above, or transfer it to a large metal shaker and apply it that way.
  • Double or triple this recipe if you plan to make more than one pork shoulder or a small whole hog.

Ingredients

  • 1/3 cup white sugar

Instructions

  • Combine all ingredients in a small bowl and apply to pork roast. Cook as directed.
  • This recipe makes enough for 1 large roast. Double or triple this recipe for multiple cooks or a larger cookout. If making ahead of time, store this pulled pork rub in an air tight container in the cupboard for up to 6 months. Rub works great in injection marinades.
