Why these Guinness Hot Dogs Will Be Your New Favorite Hot Dog Recipe
Beer braised brats have always been a thing. And if you’ve followed me for a while, you know I LOVE cooking with Guinness- it adds such depth of flavor to everything, like my Guinness Chili, my smoked oxtails, my Guinness Cassoulet recipe, and now, yes, hot dogs!
The layering of flavors really makes this recipe over the top. You get Guinness flavor in both the hot dogs and the braised red onions; melted cheese on top of the dogs, a great sauce to bring it all together, and it's then finished with bacon, potato chips, and mild pickled jalapenos for crunch and a touch of acidity. It is truly an EPIC hot dog!
It starts by first braising all beef hot dogs in Guinness and separately braising red onions in Guinness. We are layering these hot dogs with Guinness flavor! Next, the hot dogs are then grilled to get crispy edges. Then, we make a dipping sauce that is a combo of seed oil free mayo (I like Chosen foods mayo), dijon mustard, spicy pepper relish, and a splash of worcestershire sauce. The sauce is spread onto the hot dog buns, then the hot dogs are added to the buns and the hot dogs are covered in provolone. We then put them back into the grill to let the buns toast and the cheese get melted. The last part of the hot dogs includes piling on the Guinness Braised onions, pickled jalapenos, bacon and crushed potato chips. It all comes together in a juicy, cheesy, crunchy bite! Have a napkin on hand, you’ll need one!
Lastly, I know people don’t think that hot dogs are thought of as being healthy, but you can use clean ingredients when you make hot dogs. This means using nitrate free all beef hot dogs, look for organic hot dog buns (Whole Foods and Rudi's are the only organic hot dog buns I can find FYI), and using seed oil free mayo in your dipping sauce. When looking for pickled jalapenos, look for jalapenos without the preservative polysorbate 80. Use nitrate free bacon, and look for potato chips not using seed oil – one of my favorite seed oil free chip companies is Boulder Canyon. By using clean ingredients, your hot dogs will be a whole lot healthier! Also, look for Chosen Food mayo at Costco- they have the best prices on avocado mayo I have found!

Ingredients for Guinness Hot Dogs
- 1 6 pack of Guinness Beer
- 1 package hot dog buns (look for organic such as Whole Foods or Rudi’s Bakery Sourdough)
- 1 package of all beef, nitrate free hot dogs- at least 4 hot dogs
- 1 red onion, thinly sliced – these will be caramelized in Guinness
- 1 package sliced provolone- at least 4 slices
- 6 slices crispy bacon, chopped into pieces
- 1 cup potato chips- crushed for putting on top of the hot dogs
- 1 jar pickled jalapenos
Hot Dog Sauce:
Directions:
In a large pot, add three bottles of Guinness to the pot and bring to a simmer. Poke holes into all the hot dogs so they can absorb Guinness and add them to the pot and let the guinness reduce down. While braising the hot dogs, in a large pan, cook onions down and let them reduce in 1 bottle of guinness until they are fully caramelized. You may need to add another bottle of guinness until they are fully cooked down and caramelized.
After the Guinness has reduced down in the hot dog braise, turn the burner off and head out to your grill. Heat out your grill to 375 degrees and grill the hot dogs until they have char marks on all sides.
Next, cover your hot dog buns with the sauce. Place the hot dogs on the buns and cover in cheese. On the cool side of your grill where it is still warm or on the warming rack where it is not directly above the flame, place the hot dogs and let them heat until the cheese has melted and the buns are toasted.
Remove the hot dogs from the grill and now add your toppings. Layer with the braised red onions, pickled jalapenos (optional for those who don’t like any heat), bacon and chopped potato chips.
