  • Seasoning: a mix of shawarma seasoning for the warm earthy notes, all purpose rub for traditional savory flavors and sumac as a finishing touch with bright and tangy notes.
  • Veggies: roasted tomatoes and red onion for sweetness and caramelized flavors with each bite.
  • Pita: a soft base to hold all the ingredients together
  • Pickles: baby dill pickles for texture, crisp and tang.
  • Yogurt: creamy base for a garlic aoli
  • Garlic: powdered and minced to add nuttiness and sharpness to the garlic sauce.

Prep the Beef

These Sheet Pan Beef Kebabs are loaded with flavor. The prep work is simple, the flavors are bold and the cook is fast.

In a large bowl add the ground beef, olive oil, grate a white onion, add freshly chopped parsley and drop in the pre-measured seasonings that include Shawarma seasoning and Dad’s All Purpose Rub. Mix everything together.

For a leaner option, you can use ground chicken.

Want more traditional flavors, use ground lamb.

Love heat, make spicy Kebabs by adding cayenne or harissa.

For a boost of freshness, add mint or dill

Lay down a large sheet of parchment paper, the size of your pan sheet. Place about 1/3 of the beef mixture on the sheet and cover it with another large parchment paper sheet.

Next, roll out the beef between the sheets with a rolling pin until it’s about 1/2 inch in thickness. Remove the top paper.

Finally, fold the flattened beef until into smaller sections until all the meat is covered. Repeat this process until you have used up all the beef kebab mixture.

Slice up a few roma tomatoes into smaller wedges, slice a red onion. Place them on a sheet pan along the parchment paper rolled up beef. Drizzle olive oil over the veggies and sprinkle with salt.

Bake the Beef Kebabs

This Sheet Pan Beef Kebabs recipe was baked in the oven, however, you can also cook it on an outdoor pellet smoker for that extra smokiness.

Preheat the oven to 400 degrees Fahrenheit and place the pan sheet in the oven. This is a quick cook which should take about 20 minutes. The beef is thin therefore requires very little time.

Once the meat is cooked, remove the pan sheet from the oven and turn on the broiler.

Remove the baked ground beef kebabs from the parchment paper. Let it swim in all the delicious juices. Break up the beef into smaller pieces and spread them apart on the sheet pan. Place the pan sheet back in the oven for 5 minutes until you see the edges of the beef crisp up.

How to make a Homemade Garlic Aioli

There are so many store options for a garlic aioli, but honestly making it at home is so easy, why wouldn’t you make it yourself.

In a bowl add Greek yogurt, mayo, minced garlic, garlic powder, salt and a splash of lemon juice. Mix the ingredients together and give it a taste test. Adjust flavor based on preference.
