  • Raspberry preserves
  • Apple cider vinegar (substitute with white vinegar or fresh lemon juice)
  • Chipotle pepper in adobo, plus adobo sauce

Making Raspberry-Chipotle BBQ Sauce

  • Combine Base Ingredients: In a saucepan, simmer ketchup, raspberry preserves, and cider vinegar over medium heat for 2-3 minutes, stirring often.
  • Add Flavorings: Stir in minced chipotle pepper, adobo sauce, garlic powder, and dark brown sugar. Reduce the heat to low and simmer for 5 minutes.
  • Final Touches: Remove sauce from heat and stir in butter. Cool for 10 minutes before using.
  • Optional Step: After cooling, transfer the barbecue sauce to a blender and blend it until smooth. 

Tip: If you are sensitive to fruit seeds, work the raspberry preserves through a fine sieve with a spoon. This way, the seeds will stay in the sieve, and you’ll end up with the flavorful jam portion for your sauce.

How to use it

  • Glaze: Apply the raspberry-chipotle BBQ sauce to spare or baby back ribs during the last 20 minutes of cooking. Sauce chicken thighs and drumsticks during the last 30 minutes of cooking.
  • Table Sauce: For smoked chuck roast: shred of slice the meat and using this barbecue sauce as a serving sauce. It also pairs well with pulled pork, pork belly, and chopped brisket.
