About Funeral Potatoes

Funeral potatoes is a delicious casserole made with shredded hash browns, cream of chicken soup, sour cream, cheddar cheese, and topped with a buttery cornflake layer.

Invented in Salt Lake City, Utah, this creamy hash brown casserole is typically served at funeral luncheons or gifted to families during mourning. However, it is also a popular side dish served for brunch and at cookouts.

The combination of shredded hash browns, creamy ingredients, and melted cheddar cheese is beloved by all, and the cornflake topping adds just the right crunch. Funeral potatoes are versatile and certainly a crowd-pleaser.

This recipes takes this Utah staple to the smoker for an added boost of flavor. Pair it with your favorite grilled or smoked proteins and carrots for a well-rounded meal!

Ingredients

  1. Shredded hash browns: You’ll need 26-30 ounces total.
  2.  Sour cream: Use full-fat sour cream for best results
  3.  Cream of chicken soup: 10.5 ounces. If you have a vegetarian in the group, substitute with cream of mushroom soup.
  4.  Shredded cheddar: Sharp cheddar preferred.
  5.  Butter: Unsalted preferred.
  6.  Corn Flakes: Traditionally, crushed cornflakes are used for the topping. However, you can also use panko crumbs or crushed saltine crackers. for gluten-free diets, use crushed Rice Chex. 
  7.  9″x13″ Disposable Aluminum Pan: Disposable pans are perfect for outdoor cooking! They go from the smoker to the table and can house your leftovers too. A 12″ cast-iron skillet is a good alternative.

How to Make Funeral Potatoes

  • Preheat grill or smoker to 350 degrees F., and plan for 1 hour of cooking.
  • Suggested pellets: apple or some type of fruitwood blend.
  • Make the filling: Combine the hash browns, sour cream, soup, cheese, milk, seasonings, and melted butter in a large bowl. Scoop the mixture out into a disposable pan or large cast-iron skillet. Level out with your spatula.
  • Make the crumble: Combine your crushed cereal with melted butter, and spread it evenly over the hash brown mixture.
  • Cook it: Place it in the smoker, cook for 1 hour, until the hash browns are tender, and its bubbling and golden brown around the edges.
  • Rest it: Remove the the pan from the smoker, and set it on a heat-resistant surface. Let it cool for 10 minutes before serving.

Oven method

Follow the instructions in the recipe card below, and bake the funeral potatoes in the oven for 1 hour at 350 degrees F.

  • Alternative: In the mood for funeral potatoes but don’t have shredded hash browns on hand? Use country-style (cubed) hash browns instead.
  • Add ingredients: We suggest adding 1/2 cup diced green peppers, 1/2 cup diced onions, or 1/2 cup of chopped cooked bacon for a little oomph!

Ingredients

  • 26-30 ounces shredded hash browns frozen
  • 2 cups sour cream full fat
  • 1 10.5 ounces cream of chicken soup or cream of mushroom
  • 1 1/2 cups sharp cheddar, shredded
  • 1/2 cup milk
  • 1 teaspoon garlic salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/4 cup melted butter
  • Crumble:
  • 1 1/2 cups corn flakes crushed
  • 1/4 cup melted butter

Instructions

  • Preheat your grill or smoker to 350 degrees F.
  • Combine frozen hash browns, sour cream, cream of chicken soup, milk, seasonings, cheese, and 1/4 cup melted butter in a large bowl.
  • Spoon mixture into a 9"x13" disposable aluminum pan. Even out with a spatula
  • In a separate bowl, combine crushed corn flakes and 1/4 cup of melted butter. Spoon evenly onto hash brown mixture.
  • Place the pan in the grill or smoker, close the lid and cook for 1 hour, tender and golden brown around the edges..
  • Remove pan from the grill and let it sit for 10 minutes before serving,
  • Store leftover funeral potatoes covered tightly in your refrigerator for 3-4 days. Reheat in microwave.
  • *Oven cooking. Follow the assembly instructions, then bake the casserole in the oven at 350 degrees for 1 hour.
