Grilled Garlic Shrimp Skewers

This is a ‘less is more’ recipe. With only a handful of ingredients, these garlic shrimp skewers are not lacking in the flavor department.

When you cook shrimp, you want to keep the seasoning simple so as not to overpower the flavor of the shrimp. When grilling shrimp I want to taste the shrimp and the fire it was cooked over.

Garlic Shrimp Skewers

This simple marinade with garlic, lemon, olive oil, and lemon juice is perfect. It doesn’t overpower, it enhances.

These skewers also make a perfect handheld appetizer, with maybe some aioli on the side for a bit of dipping, or serve them with a green salad and fries for an easy summer dinner.

Ingredients you’ll need

  • Shrimp – peeled and deveined.
  • Garlic – fresh and powdered.
  • Olive oil – good quality olive oil is key to a good dish.
  • Parsley – fresh is best.
  • Lemon – you will need the juice only.

Equipment you’ll need

  • Grill or Griddle: I used the propane sidekick sear box attached to my Camp Chef Woodwind Pro. However, a grill or griddle will also work perfectly!
  • Knife
  • Cutting board
  • Skewers – if you are using bamboo skewers, it is highly recommended you soak them overnight or at least an hour before using them.

How to make Garlic Shrimp Skewers

1. Prep

If you’re using wooden/bamboo skewers, it’s a good idea to soak them in water first to stop them from catching fire while they are on the grill. Give them at least an hour or more.

2. Marinade

Add the garlic, garlic powder, parsley, olive oil, and, lemon juice to a bowl, and stir well to combine.

3. Marinate

Place the shrimp in the bowl with the marinade, stir to ensure all the shrimp are well coated, and let sit in the refrigerator for one hour, up to 8 hours.

4. Skewer them

Thread the shrimp onto the skewers. I like to put three on each, but it’s up to you how many you want.

5. Fire up the grill

Heat the grill to around 400°F.

Put the shrimp into the grates and cook for 2 minutes on each side.

You could brush the shrimp with the marinade left over in the bowl once they are on the grill for max flavor.

They won’t take long and you don’t want to overcook them.

  • 30 shrimp peeled and deveined
  • 1 tbsp parsley fresh and chopped
  • ½ tbsp garlic powder
  • 1 tbsp garlic fresh and chopped
  • 2 tbsp olive oil
  • 1 lemon juice only
  • salt and pepper to taste

Instructions

  • If using bamboo skewers, soak them for at least an hour or overnight before use.
  • Place the parsley, garlic powder, garlic, olive oil, lemon juice, and salt and pepper in a bowl and stir to combine.
  • Add the shrimp to the bowl and stir until they are all coated in the marinade. Leave in the refrigerator for an hour or up to 8 hours.
  • Fire up the grill to 400°F.
  • Thread the prawns onto skewers.
  • Place the skewers on the grill. Give them two minutes on each side. Do not overcook!
