Kimchi Fried Rice on the LoCo Griddle
Start prepping and gathering the ingredients for this Kimchi fried rice dish: day old white rice, diced kimchi, gochujang, minced garlic, sliced green onions, butter, sesame oil, and toasted sesame seeds.
Preheat your LoCo griddle to use 3 cooking zones: Sear, 400°F, and 300°F. When preheated, place some vegetable oil on the cooking surface and preheat.
When ready add the white parts of the green onions and garlic. Cook 2-3 minutes, stirring frequently, until fragrant.
Next add the diced kimchi and cook another 2-3 minutes.
Add the white rice and butter then mix well with the aromatics.
When combined, add the gochujang and mix well.
Move the rice mixture to the cooler side of the griddle and crack an egg on the hot side. Cook the egg for 3-4 minutes until the edges are crispy and the top is a perfectly cooked sunny side up egg.
Place the rice in a bowl and mix in the sesame oil.
Top the fried rice with the sunny side up egg, sliced green onions, and toasted sesame seeds.

- 2 cups rice day old preferred
- 1 cup kimchi diced
- 2 tbsp gochujang
- 2 tbsp butter softened
- 3 green onions sliced (white parts only)
- 4 cloves garlic minced
- 1 tsp sesame oil
- 1 egg sunny side up
- 3 green onions sliced (green parts only)
- 1 tsp sesame seeds for garnish
Setup your LoCo griddle with 3 cooking zones: sear, 400°F, and 300°F
Add some vegetable oil to the griddle surface and preheat
Add the white parts of the green onions and minced garlic. Cook 2-3 minutes until fragrant.
Add the diced kimchi and cook another 2-3 minutes until incorporated.
Add the rice and mix well until everything is combined.
Add the butter and mix in to the rice mixture until melted and equally distributed.
Add the gochujang and mix in the rice mixture.
Move the rice to the cooler side of the griddle and crack an egg on the hot side of the griddle.
When the egg is a perfectly cooked sunny side up egg, place the rice in a bowl, and pour the sesame oil over the rice.
Top the bowl of rice with the fried egg, green onion, and sesame seeds. Enjoy!
