Leftovers are a great way to repurpose ingredients and make something new and delicious. And that’s exactly what I did. I had a few slices of rotisserie prime rib sitting in my fridge and decided to make leftover prime rib tacos. Yes, otherwise known as steak tacos, this recipe was outstanding. Made a homemade red salsa to go with it and dinner was perfect.

Leftovers are a great way to repurpose a great meal from the night before. Instead of eating the same thing twice, take what’s leftover and reinvent dinner.
And tacos are the perfect meal to use leftover protein with. Whether it’s chicken, steak or pork, cut it up into small bite size pieces, make a homemade salsa, top with simple ingredients and you have a completely new dish.
Prime rib is basically steak. It’s the perfect protein to use in tacos. Usually cooked to a medium rare, a simple sear on the griddle will not overcook the meat and will make it ideal in a taco.
Step 1: Prep and grill leftover prime rib tacos
For this recipe I used a beautiful piece of leftover prime rib, but use any leftover meat you have.
Cube the meat into small bite size pieces and season with Dad’s Taco seasoning.
Preheat the griddle to a medium heat and drizzle some olive oil on the flat top. Drop the seasoned meat onto the hot grill and heat it up. Flip it a few times to get a nice crust on all sides without burning them.
Remember, the meat is already cooked. All you are doing is warming it up. Once you see nice color and char marks, remove the prime rib cubes from the grill.

Step 2: Homemade salsa
Homemade salsa is a great topping to add to leftover meals. Simple and easy to make, it adds flavor, juiciness and a kick of welcoming heat.
To keep things simple, I used a few roma tomatoes, onion, jalapeno and garlic cloves. Char them on the griddle and dropped into a blender. Close the lid and let them sit in there a few minutes to allow the hot veggies to steam.
Add 2 chipotle peppers in adobo sauce, some taco seasoning, lime juice and a pinch of salt. Blend the ingredients until the desired consistency. Just before you are done, drop in a handful of fresh cilantro. Blend enough to have chopped pieces of green cilantro visible in the salsa.
Recipe Tip
If the salsa is too thick, add 1/2 cup of water and blend again.
Step 3: Assemble the leftover prime rib tacos
Start by warming up some flour or corn tortillas.
Add a generous scoop of the grilled leftover prime rib onto the tortilla, pour the homemade red salsa, top with chopped white onion and cilantro and enjoy!
Remember, next time you have leftover meat, try making tacos. They never disappoint.

Homemade Red Salsa Ingredients
- 3 Roma tomatos

- 1/2 Red onion
- 1/2 cup Cilantro
- 1 tbsp Taco seasoning
- Pinch of salt
Cube up the cooked prime rib into small bite size pieces and season with taco seasoning. Preheat the griddle to a medium heat and drizzle some olive oil on the flat top. Drop the seasoned meat onto the hot grill and heat it up. Flip it a few times to get a nice crust on all sides without burning them. No need to check temperature, the meat is already pre-cooked.
