Marry Me Pasta

Marry Me Pasta was just one of those dishes I needed to try for myself and see if it’s worth all the hype. With my own little spin, I can say it definately was! The creamy richness from the sauce along with the charcoal flavor from the grilled chicken, this was a winning dish and something I will make again.

Chicken Grilling Tips:

  • Grill the chicken to 160 degrees internal temperature and rest if for 10 minutes. The chicken will come to the correct temp of 165 degrees and will be tender and juicy inside.
  • Do not overcook pasta. Make sure it’s slightly al dente.

Step 1: Grill chicken breast.

The recipe calls for chicken breast, but thighs will work well here as well. Keeping it original to the recipe I decided to use chicken breast. Coat in olive oil for the binder and season with Dad’s All Purpose rub. The seasoning is the perfect combo of salt, pepper and paprika spices.

Preheat the grill to 400 degrees and set it for direct heat. Flip the chicken every 3-4 minutes until the it reaches an internal temperature of 160 degrees. Let it rest for 10 minutes. This process will allow the meat to cook to the correct temp of 165 degrees and more importantly keep the chicken tender and juicy inside.

The biggest mistake people make when grilling chicken is removing at 165 degrees. The meat continues to cook after being removed from the grill or pan which always results in overcooked and dry chicken.

Step 2: Make homemade Marry Me Pasta sauce.

All the hype of this dish is in the sauce. Simple ingredients that transform into a rich and creamy pasta.

Before you get started on the sauce, cook a bag of fettuccini pasta. Bring water to a boil, add salt and throw in full pasta strips. Do not break them in half. Cook for 13-15 minutes until they are al dente in texture. When draining pasta, set some of the pasta water aside. You might need it later if your sauce is too thick.

In a skillet, melt butter and add minced garlic. Next, add in equal parts chicken broth and heavy cream. This is when you can add a splash of white wine if you care for it. Whisk continuously to prevent the sauce from burning and clumping. Add in a lot of grated parmesan cheese, chopped sun dried tomatoes, Italian herbs and Dad’s All Purpose rub. Mix the cooked pasta into the sauce.

Serve the Marry Me Pasta with sliced chicken, more freshly grated parmesan cheese and some chopped basil. Enjoy!
