Equipment
I find that using my Blackstone Griddle makes all the difference. It’s fast, convenient, and supplies good even heating for caramelizing onions and creating the perfect smash burger patties. If you don’t currently have one, you can certainly make these on a camping griddle or large cast-iron skillet on the grill or stovetop. You’ll also need a smash burger press or a sturdy metal spatula.
Recipe Ingredients
- Ground beef, 80/20
- 2 large yellow onions
- 8 slices of American or cheddar cheese
- In-N-Out Burger Sauce (recipe courtesy of sabrinacooks.com)
- Salt and black pepper
- Oil (vegetable or avocado)
- Banana peppers

- Make burger sauce: Follow recipe instructions, cover, and store in refrigerator until ready to use.
- Prep onions: Cut the onions into six, 1/2″-inch thick rounds. Season with salt (pepper is optional), and set aside.
- Prep meat: Form the ground beef into six equal-sized balls. Set aside.
- Pre-heat your grill or griddle to 375 degrees F., or medium-high heat
