Salmon with Dill Mustard Sauce
I love grilling fish in the summertime. It’s fresh, cooks fast and it’s not too heavy on those hot and muggy summer evenings.
I have made a lot of grilled salmon recipes, from a crab stuffed salmon to a maple bourbon glazed salmon, but I think this one might be my favorite.
The tanginess of the mustard and the addition of the dill flavor is the perfect compliment to a meaty and savory fish. The final touch of freshly chopped dill adds fresh aromatics to finish off the dish.

- Salmon: I used a fresh salmon filet that I divided into 4 even pieces.
- Dill mustard: the tangy sauce for the topping. You can also use regular mustard and add pickled dill juice to it.
- Shredded parmesan: adds a nutty savory flavor to balance the tanginess of the mustard.
- Dill: fresh dill to top off the fish once cooked.
- Seasoning: a sprinkle of an all purpose seasoning to add salt and pepper and balance all the flavors.
- Worcestershire sauce: adds a savory and umami flavor to the sauce.
How to make a dill mustard sauce
This dill mustard sauce is the perfect compliment to a grilled salmon. Unlike traditional liquid based dill mustard sauces that are usually poured over the fish once cooked, this one works as a thick coating or shell that is applied before the grilling process.
In a mixing bowl, add dill mustard. I used one by Silver Spring Farms. It’s the perfect mix of mustard, dill and pickled flavor.

Recipe Tip
If you cannot find dill mustard anywhere and want to achieve the same flavor as my recipe, mix regular yellow mustard with dill and pickle juice.
Add shredded parmesan, Worcestershire sauce, chopped up green onion white bulbs only and Dad’s All Purpose seasoning. Mix the ingredients together and set aside.

Prep the salmon

Prep work on the salmon is simple since all the flavor will come from the dill mustard sauce.
My store had a whole salmon filet on sale so that’s what I went with. Some stores might have pre-sliced pieces ready to go.
If you end up with a large filet, make sure to even out the fish. Slice off the thinner tapering off sides and ends. Do not throw that away. Freeze it for a fish sauce or soup, or grill it separately.
Slice even shaped pieces and cover all sides with the dill mustard sauce.

How to prepare a cedar plank
I grilled my salmon with dill mustard sauce on a cedar plank. This method adds a subtle smokey woodsy flavor to the fish.
You can purchase the pre-packed cedar planks that are sold in stores, but they can get pricey.
I went to my local hardware store, bought a long cedar plank that I then cut to size at home. I paid a third of what a pre-packed version costs and can use the leftover piece on my next cook.
If you cannot cut it at home, cut to size at the hardware store.
Since it’s a fresh cedar plank, you will need to cure it before cooking on it.

Fire up the grill and set for dual zone cooking. Place the plank on the direct side and allow the plank to heat up a few minutes on each side. This process helps prevent the wood from warping.
Once that’s done, place the dill mustard covered salmon on the plank and place it on the grill on the indirect side.
How to grill salmon on a cedar plank
Make sure you have the grill set to a medium heat. For this cook, I used my Weber Kettle grill which I set up for dual zone cooking. The reason for that was I needed the direct heat to cure the cedar plank.

The salmon will cook on the indirect side. Cover the grill and let the grilling process begin. There is no flipping required. Allow the heat to circulate inside the grill cooking the fish evenly and adding a slight hint of smokiness to the fish.
Don’t walk away from the grill for too long. This grilled salmon with dill mustard sauce will cooking within 10-15 minutes. Once the internal temperature reaches 135 degrees Fahrenheit, remove it from the grill and let it rest.
Chop up some fresh dill, sprinkle over the salmon and enjoy!

How long does salmon take to grill? Cook time for a salmon on the grill will depend on the size of the filet. Usually takes about 20 -25 minutes, however internal temperature is more important. A perfectly grilled salmon should cook to 145 degrees. Pull off the grill at 135 and rest the fish to come up to temperature.
Do you grill salmon directly on the grill or in foil? You can grill salmon on different surfaces. Steam in a foil packet, grill the salmon in a foil boat, place it on butcher paper if it’s grilled in a smoker or cooked in the oven. Cedar planks and citrus rings are also great alternatives to grill salmon on.
Should salmon be flipped when grilling Do not flip the crab stuffed salmon when on the grill. The stuffing will fall out. Grilling salmon over indirect heat will allow the fish to cook evenly throughout with just skin side down.

- 2 lbs Salmon filet
- 1 cup Dill mustard
- 2 tbsp Shredded parmesan cheese
- 2 tbsp Chopped green onion white bulbs only
- 1 tbsp Worcestershire sauce

Start by making the dill mustard sauce first. In a mixing bowl, add dill mustard, shredded parmesan, Worcestershire sauce, chopped up green onion white bulbs and an all purpose seasoning. Mix the ingredients together and set aside.
To prep the salmon filet, slice off the thinner sides and ends to end up with an even piece. Next slice the filet into 4 equal strips.
Cover all sides of the salmon with the dill mustard sauce.
Preheat the grill to a medium heat and set for dual zone cooking.
If you purchased a large cedar plank, cut to size. Make sure it will fit the grill. Next, cure it by warming up the sides over the direct heat side to prevent the wood from warping.
Place the dill mustard covered salmon on the plank and place it on the grill on the indirect side.
Total cooking time will range from cooking within 10-15 minutes. Once the internal temperature reaches 135 degrees Fahrenheit, remove it from the grill.
Let it rest 5 minutes.
