Step 1: Prepare the ribs.
Preparing the beef ribs may take some time but the final result is worth the work.
Start by slicing a rack of beef ribs into individual pieces. Next, separate the meat from the bone. Clean off any remaining fat or meat off the bone.
Coat both sides of the beef with yellow mustard for the binder. You can also substitute mustard with olive oil, Worcestershire or hot sauce. Season with Dad’s All Purpose rub and Dad’s Taco seasoning. The reason for these two spices is to get the savory notes from the AP like salt, pepper and paprika, while the taco seasoning adds a burst of cumin, lime and heat to perfectly balance the meat flavor.
Wrap each beef strip around the bone and double tie it with butchers twine.

Step 2: How to smoke the perfect beef rib lollipops
Smoking beef rib lollipops is done in the same method as traditional beef ribs. Use the low and slow process to help tenderize the meat while infusing the natural smoke flavor.
Preheat the grill or smoker to 275 degrees and set in for indirect heat. Place the seasoned beef rib lollipops directly on the grates and smoke until the internal temperature of the beef reaches 170 degrees.
Remove the ribs from the grill and place them into an aluminum pan. Add a cup of beef broth, cover with foil and place it back on the grill. Continue cooking until the meat is probe tender. Meat will reach between 200-215 degrees, however the tenderness will depend on the quality of the meat. Beef ribs are very fatty and that fat needs to tenderize to get soft meat. Probe tender texture will feel like a knife smoothly cutting through butter. That’s the ideal texture and feel of beef ribs.
Once the ribs are removed from the grill, they need to rest for 1 hour. It’s very important to rest any protein after a cook. This process helps redistribute all those wonderful juices that will create a beautifully tender slice of meat. Enjoy!
