Breakfast Skillet

When I first started my social media channel, I used to make a breakfast skillet every Sunday morning. A mix of veggies, potatoes, eggs and whatever protein I had available. It’s a family favorite, fills everyone up for the morning, taste’s amazing and super easy to make.

Step 1: Everything is better with bacon.

Ingredients for a breakfast skillet are simple. Protein, starch and veggies. Because it’s breakfast, you need bacon! Cut up a few slices of bacon into smaller pieces.

Preheat the grill to 400 degrees and set for direct heat. Throw the bacon bits into a cast iron skillet and place the whole thing on the grill.

Recipe Tip

Do not warm up the skillet before placing bacon in. This will burn the protein instead of slowly rendering out the fat and crisping it up.

Once the bacon is nice and crisp, remove it with a slotted ladle keeping the bacon grease in the skillet.

For this recipe, I decide to go with jalapeno cheddar sausages I had in the fridge. The pepper gives the dish a little bit of heat and these sausages are just plain delicious! Slice the sausage links into smaller bit size rounds and throw the in the greased up pan. Cook until both sides are crispy.

Again, repeat the process of removing the protein with a slotted ladle.

Step 2: Prep the veggies

While the sausage is on the grill, dice up the veggies you want in the skillet. I used a red bell pepper and yellow onion. You want something with a nice crunch.

Alternative veggies include:

  • Other bell pepper colors
  • Red onion
  • Mushrooms
  • Spicy peppers

Step 3: Cook the potatoes and veggies

Now that the protein is cooked, veggies are prepped, it’s time to cook them. I used frozen cubed up breakfast potatoes. You can also use fresh potatoes and cut them yourself.

Throw them on the skillet, season with Dad’s Steak seasoning and allow them to warm up and crisp up on the edges. The seasoning has light notes of salt, pepper, butter and garlic which is the perfect savory bonus to the starch. Once they are soft with some color, throw in the veggies to soften up, but still keeping a crunch.

Step 4: Mix everything together in the breakfast skillet

Finally, it’s time to mix all the breakfast skillet ingredients together. Add in the crispy bacon and sausage.

Move the skillet to the indirect side. If you have a weber kettle grill, move the hot charcoal to one side of the grill and place the skillet on the empty side. For big green egg users, use the plate setter as the barrier between the food and heat.

Make 3 wells in the breakfast skillet mixture and break an egg in each of them. Cook until they reach your preferred consistency. I personally like my yolks runny so I remove them after about 10 minutes.

Add a few fresh jalapeno slices or some hot sauce and dig into this delicious breakfast skillet. Enjoy!

  • Once the bacon is nice and crisp, remove it with a slotted ladle keeping the bacon grease in the skillet.
  • Slice the sausage links into smaller bit size rounds and throw the in the greased up pan. Cook until both sides are crispy. Remove with a slotted ladle.
  • Add breakfast potatoes into the skillet, season with Dad's Steak seasoning and allow them to warm up and crisp up on the edges.
  • Dice up the veggies. Add them to the soft breakfast potatoes.
  • Add in the crispy bacon and sausage.
  • Move the skillet to the indirect side.
  • Make 3 wells in the breakfast skillet mixture and break an egg in each of them. Cook until they reach your preferred consistency.
