This delicious grilled Brie and Apple Pizza follows a multi-step grilling process: first, the apples are grilled, then sliced and added to the pizza. Think of these as personal pizzas, where one naan creates the perfect individual crust. Don’t worry if you can’t find naan; any similar-sized ready-made pizza crust or flatbread will do!

What is naan?

Like Mediterranean and Middle Eastern pita bread, naan is a popular flatbread found in South Asian cuisine. However, unlike pita, naan is made with yeast, yogurt, and milk. Some pita bread can be thinner and dryer in texture, while naan, particularly those sold pre-packaged, is softer and thicker. They make the perfect crust for these delectable grilled brie and apple pizzas.

Ingredients

  • Naan: For this recipe, we recommend using naan rounds from Stonefire. Their soft, pillowy texture makes them the perfect base for these apple and brie pizzas.
  • Apples: We used golden delicious apples for this recipe, but honeycrisp or granny smith apples also work!
  • Brie Cheese: A standard creamy brie cheese will do. It melts beautifully. You can leave the rind on or remove it.
  • Maple Syrup: Look for “real” or “pure” maple syrup rather than anything labeled pancake syrup. Sub with honey or a balsamic vinegar reduction.
  • Nuts: We developed this recipe using toasted walnuts, but pecans, pine nuts, almonds, or hazelnuts would also work well.
  • Olive Oil: sub with avocado oil or vegetable oil.
  • Herbs: We use fresh thyme for this pizza recipe because it complements the brie and apple combo. However, you can substitute it with a small amount of fresh sage, mint, basil, or a handful of arugula if preferred.

How to Make a Brie and Apple Pizza

  • Preheat grill to medium-high heat or 375 degrees F.
  • Brush apple quarters with a neutral-flavored oil and place them on the grill.
  • Cook for 2-3 minutes, turning each piece once. Remove from the grill and place on a clean cutting board.
  • Place the naan on the grill and cook one side for 2-4 minutes until toasted. Remove.
  • Slice apples into 1/2-inch thick slices. Brush each naan on the cooked side with olive oil. Layer with apples and brie, alternating between the two. Top with your choice of nuts.
  • Place the brie and apple pizzas on the grill, uncooked side down.
  • Grill the pizzas for 4-5 minutes until they are golden brown and the cheese has melted.
  • Remove from grill, drizzle each with warm maple syrup, and top with fresh herbs. Slice and serve.

Pizza Tips

  • Grill the apples ahead of time, slice them, and store the pieces in an airtight container in the refrigerator the day before using. Do not overcook, or the apples will become mushy.

Ingredients

  • 6 Stonefire Naan Rounds (or personal-sizes thawed pizza crusts)
  • 6 firm sweet apples, cored and quartered
  • 8 ounces brie, cut into slices (remove rinds if preferred)
  • 1/2 cup chopped pecans or walnuts (sub with pine nuts, hazelnuts, or almonds)
  • 1/3 cup pure maple syrup, warmed (sub with balsamic reduction)
  • 1/3 cup olive oil (sub with veg oil)
  • 1 tablespoon fresh thyme leaves (sub with fresh basil or mint)

Instructions

  • Preheat grill for medium-high heat.
  • Brush apple quarters with oil and place on grill. Cook for 2-3 minutes turning each piece once. Remove from grill and place on a clean cutting board or plate.
  • Place naan on grill and cook one side for 2 minutes until lightly toasted. Remove.
  • Slice apples into 1/2 thick slices.
    Brush each naan on the cooked side with olive oil. Layer with apples and brie, alternating between the two. Top with your choice of nuts.
  • Place pizzas on the grill grates, uncooked side down.
    Cook for 4-5 minutes until golden brown and cheese has melted.
  • Remove from grill, drizzle each with warm maple syrup (or balsamic reduction), and top with thyme (or fresh herb of choice). Slice and serve.
  • Store leftover pizza in an airtight container in the refrigerator for up to 3 days. Reheat in microwave or enjoy them cold.
