Alabama white sauce is a tangy, creamy, and flavorful condiment made for smoked chicken. Once the chicken is cooked to perfection, each piece is drizzled or dipped in this zesty white sauce. You can also use it as a flavorful condiment for pulled chicken sandwiches.
Alabama white sauce is the brainchild of Bob Gibson of Big Bob Gibson Bar-B-Q in Decatur, Alabama. In 1925, he developed the perfect concoction to prevent his smoked chickens from drying out. He began dipping cooked chicken into a sweet, vinegary, creamy white sauce before selling it to hungry customers. White sauce has since become legendary and is enjoyed by many across the US.
Ingredients
- Real mayonnaise: I find this makes for a creamier Alabama sauce, but if you’d like it zippier, go with something a tarter variation. Remember, there is vinegar and lemon juice in this recipe.
- Apple cider vinegar: This stuff really adds a nice punch to the sauce and compliments chicken so well.
- Granulated sugar: Adds that hint of sweetness that cuts the tart and balances the creaminess.
- Juice of 1-2 lemons: You’ll need about 2 tablespoons of lemon juice for this recipe. Lemon brightens the sauce and pulls it all together.
- Horseradish: I recommend using a prepared horseradish. Sub with Dijon mustard.
- Granulated garlic, cayenne pepper, black pepper, and salt: Adjust cayenne to your liking, or sub with hot sauce.
How to make Alabama white sauce
- Whisk ingredients in a medium bowl. Mixture should have the consistency of a creamy salad dressing.
- Cover and place bowl into the refrigerator for 30-45 minutes before using it. Doing this will allow the ingredients and flavors to merge.
- For best results, make the white sauce the day before, and store it in the fridge.
How to use it
- This Alabama white sauce is a serving sauce, not a typical tomato-based barbecue sauce that is brushed on foods as they cook.
- Remove the sauce from the refrigerator about 20 minutes before you are ready to use it. Give it a good stir.
- Dip the fresh off the heat smoked chicken pieces in the sauce or drizzle it on top.
- Combine pulled chicken with sauce for delicious sandwiches. Sauce can also be used on pork or as a dipping sauce for french fries.
Storage
This delicious Alabama white sauce can be stored in an airtight container in the refrigerator for 4-5 days after preparing, allowing you to enjoy it for a longer period.
