Chipotle-lime marinade

The chipotle-lime marinade is the first building block of flavor for these chicken breasts. It contains delicious ingredients that pack a flavorful punch! To make it a little smokier, add 1/2 teaspoon of smoked paprika. See below for marinade instructions.

  • Add the ingredients into your blender or food processor, and blend the mixture.
  • Place the chicken in zip-top bag, and pour the marinade over top. Gently toss chicken with tongs to coat.
  • Seal the bag, place it in the refrigerate to marinate for 2-4 hours or up to 6 hours if needed.

flattening chicken breasts with kitchen mallet

We recommend flattening the chicken breasts or this recipe. This will allow the chicken to absorb the marinade well and cook evenly on the grill. It’s best to flatten the chicken breasts a little less than half of its original thickness.

  • To flatten, place a 10″ piece of plastic wrap on your counter.
  • Place 1-2 chicken breasts on top and cover with another 10″ piece of plastic wrap.
  • Using the flat side of a kitchen mallet, lightly strike the chicken breast(s) from the center, moving outward to create a uniform shape. Aim for an even ¾” thickness.
  • Repeat the process with the remaining breasts.

  • Place the marinated chicken breast on a 375-degree preheated grill.
  • Close the lid, and cook for 6-8 minutes per side, or until the internal temperature reaches 165 degrees F. Remember to have a reliable meat thermometer handy!
  • Adjust cooking temp as needed.
  • Once cooked, transfer grilled chicken breasts from the grill and place them on to a clean cutting board or platter. Garnish with chopped cilantro and a few lime wedges.
