What is a Chuck Eye Steak?

These well-marbled beef steaks are taken from the shoulder (chuck roast) section of a steer. It is then sliced into 1″-2″ thick chuck steaks and sold individually. These large steaks can feed up to 4-5 people and are relatively budget-friendly. They are available in most grocery chains across North America and through online meat purveyors. Is Chuck Eye better than Rib-eye?

These versatile steaks are a great alternative to ribeye. They are just as tender and flavorful and can be cooked in a cast iron skillet, grill, or smoker. Chuck steaks are known as the “poor man’s ribeye steak.” Once you taste it, you’ll know why.

Seasoning and grilling chuck steaks

All you’ll need is just a few ingredients to make the best chuck eye steak. We use a simple salt and pepper rub; however, you can use a marinade or one of our steak rubs for a more flavor-packed experience. And don’t forget to add a light coating of olive oil to help lock the spice rub in place and keep those flavors intact. 


Grilled Chuck Eye Steak

Hot and fast is the best method for cooking chuck steaks. Plan accordingly based on the thickness of the meat and your desired doneness. We recommend serving them medium-rare, though it’s best to consult a steak temperature guide to find your true preference.

Note: Chuck eye steaks are versatile and easy to cook in a cast-iron pan, a grill, or low and slow on a smoker. We recommend cooking them over charcoal. However, your pellet grill or gas grill will work just fine!

Ingredients

  • 2 chuck eye steaks about 1″ thick and 1 1/2 pounds total
  • Kosher salt
  • Black pepper, medium ground
  • Onion powder (sub with garlic powder if preferred)
  • Optional herb (fresh rosemary, fresh thyme, oregano, etc.)

Grilling chuck eye steaks:

  • Meat: You’ll need two chuck eye steaks, about 1″ thick. Blot meat with paper towel and apply a thin coating of olive oil.
  • Season: Combine salt, black pepper and onions powder. Season chuck eye steaks evenly on both sides. Once seasoned, let the steaks stand at room temp for 20 minutes before grilling.
  • Grill method: Prepare your grill according to instructions found in the recipe card below. Use cherry or pecan wood for this recipe. Cook over direct heat for 3-4 minutes per side or until it reaches desired doneness.
  • Cast iron method. Get the pan super hot, add 2 teaspoons oil or a pat of butter, then add your steaks. Cook for 3-4 minutes per side, turn, and repeat the process until it reaches desired doneness. Keep a reliable instant-read meat thermometer close by.
  • Resting: After cooking, remove the steaks from the heat and let them rest for 5-7 minutes before slicing.
  • Topping: Make a quick and easy board dressing to toss your chopped chuck steak before serving. Trust us; it’s divine! You can use a compound butter instead of using a board dressing.

Ingredients

  • 2 chuck eye steaks about 1″ thick and 1 1/2 pounds total
  • 1 1/4 tablespoons kosher salt
  • 1 tablespoon black pepper medium ground
  • 1 teaspoon onion powder

Instructions

  • Preheat grill for high heat or 500 degrees F. Use cherry or pecan wood for an extra hit of smoke.
  • Blot chuck eye steaks with paper towel, and brush on a light coating of olive oil.
    Combine salt, black pepper, and onion powder in a small bowl. Season both sides of steak with seasonings. Let stand at room temperature for 20 minutes.
  • Place chuck steaks on the grill, cook for 1 1/2-2 minutes, rotate 45 degrees, and cook for another 1 1/2-2 minutes.
    Flip steaks and repeat the process. We recommend medium-rare to medium for these steaks with an internal temperature of between 135-140 degrees F.
  • Once cooked, remove steaks from the grill, and place them onto a clean cutting board. Rest for 5-7 minutes, slice against the grain and serve.
  • Cast iron skillet method. Get the pan super hot, add 2 teaspoons oil or a pat of butter, then add your steaks. Cook for 3-4 minutes per side, turn, and repeat the process until it reaches desired doneness.
