One of my favorite things to make on a busy weeknight is garlic butter steak bites. I’ve cooked them on the stovetop and the griddle, but I decided to try them out on the gas grill with skewers and it might be my new favorite way to make them.
The garlic parmesan butter sauce brushed over the steak while it’s cooking makes it delicious, and the char you get from a gas grill takes this recipe to the next level.
Plus, they only take about 20 minutes to whip up, making them a great meal when you’re short on time.

Grilled garlic parmesan steak bites
Ingredients you’ll need
- Sirloin tips – but any cut of steak will work. If you opt for a ribeye or tenderloin, just chop the steaks into cubes about 1”-1½” thick.
- Steak seasoning – I used our Smoke Kitchen Beef rub for this recipe, but any steak seasoning will work. Be sure to use something with a decent amount of salt and pepper.
- Butter – I prefer salted butter, but unsalted butter will work as well.
- Garlic
- Parmesan cheese
Equipment you’ll need
- Grill – I used my Napoleon Phantom Prestige gas grill for this recipe, but any gas or charcoal grill is fine if it maintains a steady temperature of around 400°F.
- Skewers – I prefer to use metal skewers, but you can use wooden skewers as long as you soak them in water for 30 minutes prior to cooking to prevent them from catching on fire.
- Bowl
- Cast Iron Pot or Pan – to make the sauce on the grill.
- Basting Brush – silicone is my choice of brush.
- Instant read thermometer
What are sirloin tips?
Contrary to what the name would have you believe, sirloin tips don’t actually come from the top sirloin. Sirloin tips come from the round, and they are tender, lean, and flavorful.
They are also an inexpensive option compared to other cuts of beef like ribeye or tenderloin.
How to make grilled garlic parmesan steak bites
1. Sauce
I like to put the garlic parmesan butter on the grates right when I fire up the grill and let it sit and melt while it preheats.
Add the butter, minced garlic, and grated parmesan to a cast iron pot and place it on the grill’s grates.
2. Fire up the grill
Preheat the grill to medium-high heat, around 400°F.
By the time you’re done prepping your skewers, your grill should be preheated, and the garlic butter will also be ready.
3. Season
While the garlic parmesan butter in this recipe is packed full of flavor, you still want to season your sirloin tips. I used our Smoke Kitchen Beef Rub, which combines salt, pepper, spices, and a bit of truffle.
Any steak seasoning will work for this recipe, so feel free to use what you have on hand.
Add the sirloin tips to a bowl and sprinkle on the seasoning. Mix the steak bites until each piece is well-coated.
4. Skewer
I prefer to use metal skewers because they are easier to work with, but you can also use wooden skewers.
If you opt for wooden skewers, be sure to soak them in water for at least 30 minutes before grilling to ensure the wood doesn’t catch on fire on the grill. I’ve had that happen to me before when I was grilling shrimp and trust me, it’s a pain in the butt – so learn from my mistakes!
Thread the steak onto the skewers.
5. Grill
Once your grill is preheated and the garlic parmesan butter sauce is melted, you can place your skewers on the grill grates over direct heat.
You’ll let the steak skewers grill for about 15 minutes, flipping every 3-4 minutes, until they reach an internal temperature of 135°F, medium rare.
As the steak skewers cook, brush on the garlic parmesan butter every time you flip them.
6. Serve
When your skewers are done, remove them from the grill and plate. Top with an extra sprinkle of grated parmesan cheese and green onions.

- 1 stick butter
- 5 cloves garlic minced
- ¼ cup parmesan cheese grated, plus extra to serve
- 1 lb sirloin tips (or steak of your choice) cut into 1" cubes
- 1 tbsp steak seasoning or beef rub
- green onions chopped for garnish
Add the butter, garlic, and parmesan to a small cast iron pot.
Place the pot on the grill grates and preheat the grill to medium-high heat around 400°F.
Season your sirloin tips with the steak seasoning.
Thread the seasoned sirloin tips onto the skewers and place them on the grill grates.
Brush the skewers with the melted garlic parmesan butter sauce and cook for about 15 minutes, flipping and basting every 3-4 minutes, until they reach an internal temperature of 135°F.
Once cooked through, remove from the grill and plate alongside the remaining garlic butter sauce for dipping.
Garnish with more grated parmesan and green onions and serve immediately.
