Ingredients
- Split chicken wings, wingettes and drummettes
- Olive oil
- Kosher salt
- Coarse ground black pepper
- Garlic powder
- Butter
- Garlic
- Grated parmesan (not shredded!)

Making grilled garlic parmesan wings
- Preheat the grill or smoker to 275 degrees F or medium-high heat. Cherry, apple, or pecan wood pellets or wood chips are recommended.
- Trim off any excess bits of fat or loose skin the chicken wings. Blot dry with paper towels, toss wings with olive oil, and season with garlic powder, salt, and black pepper.
- Place the wings on the grill and cook for about 50 minutes, turning occasionally, until they are nearly done or have reached an internal temperature of 160 degrees F.
Finishing touches: air fryer and sauce
Using an air fryer is a great way to crisp up the wings. Depending on the size of your fryer, you may need to complete this process in batches. If you’d like them done all at once, see the broiling option below.
- Preheat your air fryer to 400 degrees F.
- Transfer the grilled wings to the air fryer and cook for an additional 10-15 minutes until they are crispy, and cooked all the way through to an internal temp of 175 degrees F.
- While the wings are in the air fryer, melt the butter over low heat in a small saucepan. Once melted, stir about 3/4 of the grated parmesan cheese and all of the minced garlic. Cook over low for 30 seconds to release the flavor. Remove pan from heat and set aside.
- Place the cooked wings in a large heat-resistant bowl. Pour the garlic-parmesan sauce over top and toss to coat.
- Plate the wings on a serving platter. Garnish with remaining parmesan and chopped parsley.
- Serve immediately.
- Store leftover wings in an airtight container in the refrigerator for up to 4 days. Store in the freezer for up to 1 month. Reheat in the oven or air fryer.
Broiling wings in the oven
- Cook wings to an internal temperature between 160-165 degrees F.
- Preheat the oven broiler to high.
- Place the grilled wings on a wire rack set on top of a parchment-lined sheet pan.
- Adjust the oven rack so that the wings will be around 6 inches from the broiler element.
- Place the wings in the oven and broil for 4-5 minutes on each side or until they are golden, crispy, and have reached an internal temperature 175 degrees F. Keep a close eye on the wings to prevent burning.
- Remove them from the oven and toss in the garlic butter sauce. Garnish and serve immediately.
