  • 2 pounds of sea scallops kissed dry. 
  • A sprinkle of salt and black pepper, a dance of flavors. 
  • 4-5 tablespoons of unsalted butter, a creamy canvas. 
  • 4 garlic cloves, minced, a savory aroma. 
  • 2 tablespoons of minced thyme leaves, a fragrant touch. 
  • 2 tablespoons of freshly squeezed lemon juice, a bright tang. 
  • 2 teaspoons finely grated lemon zest for a zesty punch.

Instructions 

  • Before grilling the scallops, rub them with some quantities of salt and pepper.

Arrange the seasoned scallops in a single layer in the skillet, making sure they are not touching each other. Let the bottom cook, undisturbed, until golden brown, about 3 minutes. Cook in batches, adding a tablespoon of butter to each batch if necessary.  
  • Flip the scallops and put a spoon of cream to the pan. Add the minced garlic and thyme. Cook until the garlic becomes fragrant. 
  • When cooking the scallops in batches, return them to the pan immediately. Pour lemon juice over scallops and garnish with lemon zest. 
  • Plate and Garnish: Transfer scallops to a plate. Sprinkle with red pepper flakes and serve with chopped herbs and lemon wedges. Serve immediately.
