Plank Grilled Brie is one of the easiest appetizers to prepare on the grill, and it’s both satisfying and delicious! The great thing about petite brie is that it comes in different varieties, allowing you to mix and match flavors.
If you’re unsure of which brie to use, ask your local cheesemonger for samples and suggestions. Pair your brie appetizer with a crisp white wine like Riesling or a light red wine like Pinot Noir.
Why this plank grilling works
Planks offer an excellent platform for small or delicate foods that could otherwise fall apart on the grill. It is also an ideal method for indirect grilling. The food will absorb the smoke flavor of the wood without being directly exposed to the flame. Although this technique doesn’t produce grill marks, the food will cook evenly and safely. Ingredients
- A large oak plank
- 2-3 petite brie wheels (with rind)
- Fig Preserves
- Chopped almonds (sub with toasted pine nuts, pecans, or walnuts)
- Crackers, bread, or crostini
How to Grill Brie on a Plank
- Prep the plank: Soak plank for 30 minutes in lukewarm water.
- Heat the grill: Prepare your grill for 350 degrees F, indirect cooking.
- Dry plank: Remove plank from water and dry thoroughly with paper towels.
- Brie: Unwrap brie wheels and place them onto the plank.
- Grill: Set plank on the indirect side of the grill, close lid, and let cheese warm through for about 7-10 minutes. If using larger brie wheels, heat through for 10-13 minutes.
- Finishing touches: Next, spoon about 1/2 to 1 tablespoon of preserves right on the top center of each brie. Top with nuts. Save some extra preserves and almonds to serve on the side. Let the plank grilled brie continue to warm for about 2-3 more minutes.
- Serve: Remove and serve with crostini, crackers, or sliced apples.

Recipe Alternatives
- Change the jelly: Any jelly, jam, or flavored honey works well with this plank grilled brie. You can even make it spicy and add a little use pepper jelly or hot honey.
- Change the topping: You can use your favorite chopped nuts like pecans, walnuts, hazelnuts, or even peanuts. Or, you can skip the nuts all together and use chopped crispy bacon or deep fried onions.

- 1 large oak plank (red oak)
- 3 petite brie wheels
- 1/4 cup fig jam
- 10-12 almonds
- crackers, bread or crostini
Soak plank for 30 minutes in lukewarm water.
Toast almonds in a skillets, making sure to move them around often so they do not burn. This process will take about 3 minutes. Remove almonds from heat and place on a clean cutting board. Using a sharp knife, chop into smaller pieces. Set aside.
Prepare grill for a 375 degree F, indirect cook.
Remove plank from water and dry thoroughly with paper towels.
Unwrap brie wheels and place them on the plank. Set plank onto grill grate, close lid and let cheese warm through for about 7-10 minutes.
Next, spoon 1 tablespoon of preserves right on the top center of each brie. Top with chopped nuts. Let cheese continue to warm for another 2-3 minutes.
Remove the plank with cheese and serve with crostini, crackers, or sliced apples, and extra preserves and almonds on the side.
