This smothered beer brined pork chops in beer gravy recipe is comfort food at it’s finest. The sweetness from the onions along with the savoriness from the beer and pork chops make for the perfect weeknight dinner. Best of all it’s super easy to make.
Marinate the pork chops.
First things first, you need to marinate the pork chops. I decided to use beer as my marinade and it was the best decision I’ve made it a while! Not only did it absorb in the meat to give the meat flavor, but tenderized the meat better than any marinade I’ve used in the past. It’s a must try.
Place unseasoned pork chops in a deep dish and pour a can of beer all over them. Let the meat marinate in the liquid for 1 hour while you prep the gravy.
Best beer gravy ever!
I have never used beer in gravy, but after making this recipe, it’s my must have ingredient for all future gravy’s. It brings delicious savory and hoppy notes that make each bite as amazing as the first. It’s safe for kids since the alcohol burns off during the cooking process.
Slice an onion and throw it in a saucepan or skillet along with some butter. Add sage and thyme and place the skillet on the grill to sauté over medium heat. Once the onions are tender and translucent, add some brown sugar and cook for another 5 minutes. Next, add flour and cook for another 5 minutes to cook off the raw flour taste. Add a can of beer and cook until it reduces by half. Finally, add beef stock and Dad’s All Purpose rub and continue to cook until the sauce thickens to your desired consistency.
Quick sear on the pork chops.
For this recipe I used bone-in pork chops. The bone adds an additional depth of flavor making the dish just that much better. Remove the marinated pork chops from the beer bath and season all sides with Dad’s All Purpose rub and set aside while you preheat the grill. During this time, the meat will sweat, absorbing the savory flavors of the rub.
Preheat the grill to 400 degrees and set for direct heat. Place the seasoned chops directly on the grates and grill 2 minutes per side and remove.
Sprinkle some freshly chopped parsley over the grilled pork chops in beer gravy and serve over homemade mashed potatoes. Enjoy!

Beer Gravy Ingredients
