I am a firm believer in using a brisket injection when smoking a beef brisket. It is an excellent way to enhance the moisture and overall texture of your smoked beef. This savory brisket injection marinade will not only add amazing flavor but also keep your brisket juicy and delicious from the inside out. This recipe yields enough savory injection marinade for 1 whole-packer brisket, allowing you to scale up based on your cooking needs.
Why use coffee in a brisket injection marinade?
Adding prepared coffee to a brisket injection marinade enhances both the meat’s natural beefy flavor and helps tenderize it internally. When used in tandem with a coffee rub, it can help to deepen the color of the brisket during low and slow cooking.
Ingredients
- Beef stock made with Minor’s beef base or Better than Bouillon Beef Base
- Worcestershire sauce
- Prepared coffee
- Soy sauce
- Black pepper
- Unsalted butter
Making Savory Brisket Injection Marinade
- Bring brisket injection ingredients to a simmer in a small saucepan over medium heat for 5 minutes. Stir occasionally. Taste and adjust the seasonings to your liking.
- Remove the saucepan from the heat and let the mixture cool for 30 minutes.
How to Inject a Brisket with marinade
- Draw some of the injection marinade mixture into the syringe, inject the meat and gradually release some of the marinade. The section will plump up a bit, and there may be some spillover. Gently mop it away and continue.
- Discard any remaining injection marinade that has come into contact with raw meat.
Tips
- Beef Base: I recommend using Minor’s beef base for this recipe, but if you don’t have it on hand, try Better than Bouillon roasted beef base. The important thing here is to add a nice beefy foundation to the injection marinade.
- Coffee: This recipe calls for prepared instant coffee. However, for a deeper, richer flavor, you can use prepared espresso. Add a small amount to the marinade, and increase it to suit your tastes.
