Smoked Bologna Sandwich

Who has not had a bologna sandwich as a child?! Bland and boring, we all ate it for lunch at some point. As an adult, I wanted to elevate the classic lunch special. This smoked bologna sandwich has the perfect balance of smokiness, savoriness and crunchiness all in one. Step up your old school classics with the modern twist.

Step 1: Prep the bologna

You are probably asking where one can get a whole chub of bologna? Ask the deli manager at your local grocery store and they will wrap one for you.

Before you start prepping the bologna, make sure to remove the plastic wrap that may be around the chub. You do not want it to melt on the meat once it’s on the grill!


Smoked Bologna Sandwich

Plain bologna is bland. To add some flavor I like to season it around the entire outside. But first, score the log down and across about a 1/4 inch deep forming a checkered pattern. This will help bring the smokiness and flavor into the bologna.

Spread yellow mustard around the entire chub and season with Dad’s All Purpose rub and Dad’s Sweet BBQ rub. This combo is the perfect mixture of savoriness and sweetness for the ultimate BBQ flavor.

Step 2: Smoke the bologna

Preheat the grill to 275 degrees and set it for indirect heat. Place the seasoned bologna on a wire rack and put it on the grill to smoke low and slow. Total smoking time is around 3 hours. Depending on the size of the bologna, time may vary. You know it’s done when the scored checkers have opened up, color is nice and dark without any char but the chub is still a little wiggly.

Step 3: Assemble the smoked bologna sandwich

Before you start assembling the smoked bologna sandwich, a must is toasting up some bread slices. Next, spread yellow mustard on the bread, add a thick slice of smoked bologna, a slice of cheese, a generous spoonful of creamy or vinegar based coleslaw, some crispy fried onions on top and close the sandwich. Go for the first bite and enjoy!
