Okay, so back to the S’mores Brownies!
What I love about this S’mores brownie recipe is that it is actually healthy without tasting like it is healthy. Without adding the marshmallows and the graham cracker/cookie part of the S’more, the brownie itself is keto friendly, paleo friendly and gluten free, so it is fine to make for those in your life who might have dietary restrictions. Plus, because you know that you are going to eat more than ONE, it is nice to know that the brownie portion of this recipe is super healthy!
Now, for the graham cracker part of this recipe. I chose to use shortbread cookies for my s’mores brownies because I think they’re a bit extra over graham crackers. If you checked out my S’mores Bar post, you would see that I’m a big fan of mixing up the s’mores with different kinds of cookies and chocolates, so definitely use what you love for this part of the recipe. Also, if you want to keep this entire recipe gluten free, opt for gluten-free cookies for this section. Some of my favorite gluten-free cookies are from SimpleMills, which you can usually find at any grocery store or Amazon.
For the marshmallows, I went a bit EXTRA as well and used Smashmallow. This is totally optional, but Smashmallow makes amazing marshmallows and they are made from organic cane sugar, not high fructose corn syrup like most store-bought marshmallows. So, in the spirit of being better for you while also being delicious, the Smashmallow Toasted Vanilla really take these over the top. They also have really fun flavors like cinnamon churro, cookie dough and dark chocolate dipped cold brew, so you can really customize these s’mores brownies. Now we’re talking serious dessert porn!
Lastly, what really makes these super fun is that I made these s’mores brownies in mini cast iron skillets. I got these mini dessert skillets on Amazon, and while they are great for personal sized desserts, they are also great for single-serving size dips, an amuse bouche, or whatever strikes your fancy! I got these mini skillets on Amazon here. If you don’t have these and want to make this recipe, no worries, you can bake them in a standard sized 8- or 10-inch cast iron skillet or in a cupcake tin.
You may need to adjust the cook time to cook longer in a single cast iron skillet. The best way to tell if something is done is by inserting a toothpick—if it comes out clean with no crumbs it is done. The last five minutes of cook time are the time to add your marshmallows. This way they will get warm and gooey but without getting overcooked. Now, if you love your marshmallows kind of burned like I do, this is a great time to pull out your butane lighter and give the marshmallows a few seconds under the torch. Let’s admit that this is also just a fun thing to do to show off at the end and gives you that true s’mores light-something-on-fire feeling!
It is hard to do, but give the brownies 10 to 15 minutes to cool down so you don’t burn your mouth! These are amazing on their own, but if you want to take them over the top, a scoop of vanilla ice cream doesn’t hurt!

Nothing is better than a healthy brownie recipe, except maybe a SMOKED SKILLET SMORE’S BROWNIE recipe that transports you to your girl scout days of roasting marshmallows by a campfire. This brownie recipe is made on the Green Mountain Grill Pellet Smoker giving these brownies that roasted by the campfire taste, infusing them with smoke flavor while baking them at the same time.
- ½ cup coconut oil
- 2 eggs
- ⅓ cup dark chocolate chips (use sugar free if you want the brownies to be keto)
- ¾ cup coconut sugar (paleo) OR Swerve sweetener for keto brownies
- ½ tsp. Himalayan salt
- 3 tbsp. arrowroot starch
- ⅓ cup cocoa powder
- 2 tsp. vanilla extract
- 1 tsp. cinnamon
- 8 shortbread cookies, graham crackers OR gluten free cookies of your choice (SimpleMills is paleo and gluten free)
- 16 marshmallows (approximately one packet of Smashmallow)
- Heat your Green Mountain Grill to 350 degrees. Meanwhile, melt the coconut oil and chocolate chips in a small pot over medium heat. Add the coconut oil and chocolate mixture to a bowl.
- Combine the rest of the ingredients.
- Next, coat all the cast iron skillets with coconut oil. Pour in the batter. If you run out of skillets, you can put the remaining batter into cupcake tins using liners.
- Bake the brownies for 20 minutes. At the 20-minute mark, add 2 marshmallows per skillet. Cook another 5 minutes. Remove the skillets and let cool.
- Serve skillet brownies on their own or with ice cream.
