So, you just bought your new LoCo 36″ SmartTemp 3-Burner Griddle and want to get started. Before you cook anything on this new cooker, you need to season it first. The cook top of a griddle is just like an unseasoned cast iron skillet. So, you need to season it well to prevent rust and to build up a non-stick surface. Do not worry, as this process couldn’t be any easier and you will be cooking on your new griddle in no time! How to Season a LoCo Griddle
After constructing your new griddle and placing the propane gas tank in place, wipe the cooktop clean with a damp towel. After the cooktop has been wiped clean, turn the propane gas on, plug the griddle in, light the griddle, and set all three of the the temperature controls to sear. Let the griddle sit for 15 minutes on the sear setting before moving to the next step.
After the 15 minute burn in, squirt a small amount of vegetable oil onto the hot cooking surface.
Get a clean towel and a set of tongs (to protect your hands from the heat) and work the oil in to all of the surfaces of the griddle cooktop.
To protect from rust, make sure to wipe the oil in to ALL of the surfaces front and back of your new cooktop.
When done, and there are no pools of oil sitting on the cooktop, let it sit on the highest temperature setting until all the smoke clears. Note: the oil you just rubbed in to the cooking surface will produce a small amount of smoke until it works its way into the cooktop.
When the smoke clears repeat this process again and again for a total of 5 times to properly season your new LoCo griddle cooktop.
After you finish the 5th coat and the smoke clears, stand back and admire your well seasoned shiny new LoCo griddle!
