These mouthwatering blue cheese burgers are similar to those served in classic steakhouses across the United States. Each patty contains minced bacon and onion seasoning, which takes them to a whole new level! These are often a highlight at our game-day parties, and our guests always rave about them, constantly begging us for the recipe. So without further hesitation, we’re sharing it with everyone!

Why blue cheese?

Blue cheese is a medium-soft cheese known for its creamy texture and sharp flavor. It is often paired with beef and adds a deep, rich, tangy flavor to burgers and steaks.

  • 2 pounds ground beef (80/20 chuck preferred)
  • 3 strips of uncooked bacon
  • Onion soup mix
  • Worcestershire sauce
  • Crumbled blue cheese (sub with feta, goat’s cheese, or gorgonzola)
  • 1 large yellow onion
  • Butter

The best type of ground beef for burger making

The best lean to fat for juicy and flavorful burgers is 80/20. Avoid lean combinations like 90/10. While it is great for soups and stews, it is far too lean for making burgers. Instead, opt for ground chuck as it contains the right fat-to-meat ratio, or a combination of chuck and sirloin for the best results.

Making the perfect burger patty

You can complete this step before grilling or several hours before. If making beforehand, store the patties on a parchment-lined baking tray. Cover them plastic wrap to keep them supple. Let the patties sit at room temperature for 20-30 minutes before grilling.

How to make burger patties

  • Mince the bacon with a sharp knife. It should be the same consistency as the ground beef.
  • Combine the ingredients: In a large bowl, combine ground beef, bacon, onion soup mix, and Worcestershire sauce. 
  • Make the patties: Form mixture into 4 equal-sized hamburger patties. Make a small dent in the center of each patty so they do not become round during the cooking process.
  • Smash Burger style: Cook and crumble the bacon before mixing it in the meat mixture. Form into 8 equal sized balls. Cook them on a griddle, and serve 2 patties per burger.

Cooking the onions

Caramelized onions adds a nice sweet and savory flavor to these blue cheese burgers. It take about 15-20 minutes to cook over medium-low heat, and can be done ahead of time. If you want to go a step further, try smoking the onions!

  • Melt butter in a skillet over medium-low heat. 
  • Add sliced onions, and cook for 15-20 minutes until tender, translucent, and caramelized. Reduce heat as needed. The onions should be soft and golden brown.
  • Season with salt and pepper. Stir through, cover the pan and keep warm.

Grilling the burgers

  • Grill set-up: Preheat your grill to 375 degrees F or medium-high heat.
  • Cook the patties: Place the patties on the grill grates and cook for 6 minutes per side until they reach an internal temperature between 160-165 degrees F. 
  • For fresh ground beef: If you’ve ground the burger meat yourself, you can cook them to an internal temperature of 150-155 degrees F. Do not do this with store bought ground beef.

Don’t forget the buns!

Toward the end of cooking, brush insides of the brioche buns with oil. Place them on the grill oiled side down for 1-2 minutes until golden brown. Promptly remove.

  • In a large bowl, combine ground beef, bacon, onion soup mix, and Worcestershire sauce.

  • Place the patties on the grill grate and cook for 6 minutes per side until they reach an internal temperature between 160-165 degrees F.
  • Toward the end of cooking, brush the insides of the brioche buns with oil.
  • Place them oiled side down on the grill grate, and toast them for 1-2 minutes until golden brown.
  • Remove burger patties and buns from the grill, and assemble your burgers.
  • Assemble the burgers and top each patty with crumbled blue cheese and caramelized onions.
  • Store leftover burger patties in an airtight container in the refrigerator for up to 3 days. Store toppings separately. Reheat patties in a skillet or in a 325-degree oven for best results.
