Beef Tenderloin Tips in a Red Wine Sauce

This recipe was developed by a very good friend of mine, Darryl Postelnick. Also known as Cooking with Darryl, he recently released his first cookbook and the recipes are amazing. This beef tenderloin tips in a red wine sauce recipe is perfect for holiday entertaining, dinner parties or the perfect date night meal. In true GWD fashion, I made a few tweaks to the recipe and this beef came out tender and the sauce was rich and flavorful. Can’t wait to try some of the other recipes from his cookbook.

Is a beef tenderloin the same as a filet mignon?

A beef tenderloin is a large cut of very tender and lean beef from which a filet mignon is sliced. Located near the cow’s backbone, this muscle is rarely used, making it one of the most tender cuts of beef. A tenderloin is mostly used for large elegant recipes like the Beef Wellington or beef roast.

For this recipe, the ingredients called for beef tenderloin tips. This cut comes from the tail end of the beef tenderloin. Grocery stores will sometimes sell these already sliced or a butcher can slice off the end piece of the tenderloin.

Ingredient list for this recipe is short and simple. Aside from the beef tenderloin tips, you will need beef broth, a dry red wine, sliced mushrooms, pearl onions, garlic, butter and seasoning. A handful of chopped parsley adds vibrance and freshness to this rich dish.

Start by pealing the the pearl onions and garlic cloves. If you have whole mushrooms, peal and slice those as well.

Step 2: Season and grill the beef tenderloin tips

If your tenderloin tips were not pre-sliced, cube the beef tenderloin into small bite size cubes and season with Dad’s steak seasoning. This rub adds a rich layer of herby and buttery flavors that are perfect on beef.

Preheat the grill to high direct heat. Place a cast iron skillet over the grate, add some olive oil and let it heat up.

Drop the beef tips into the skillet and sear 1 minute per side. Make sure to get all side. Remove from the grill and it’s time to make the red wine sauce.

Step 3: How to make a red wine sauce for beef.

In the same cast iron skillet, add beef broth, red wine and half a stick of butter. Stir and wait for the butter to melt.

Next, add in sliced mushrooms, pealed pear onions, garlic gloves or minced garlic, and Dad’s steak seasoning for an extra punch of flavor.

When the sauce comes to a boil and the veggies are soft, add the seared beef tenderloin tips back into the skillet.

Finally, add the remaining 1/2 stick of butter, fresh rosemary and thyme sprigs and simmer for another 5 minutes. Allow the beef tips to absorb the rich flavors from the sauce.

Sprinkle some freshly chopped parsley over the beef tenderloin tips is a red wine sauce and serve with roasted potatoes. Enjoy!

What cut of steak should I use?

Type of steak depends on what you are trying to grill up. For hot and fast look for cuts with good marbling like a ribeye or NY strip. If you are cooking a roast or stew, look for cuts that are cheaper and meatier like a chuck roast.

The internal temperature all depends on how you want or prefer your steak cooked. For a medium rare, remove it at between 120-125 degrees. If you are going for a medium cooked steak, anywhere between 135-140 degrees. Anything over will be well done.

Can I make this in the oven or stove top?

All my recipes can be replicated in the oven, stove top or gas grill. You do not need a big green egg or weber grill to replicate any of my recipes.

  • 1 lbs Beef tenderloin tip
  • 1 tbsp Olive oil
  • 1 tbsp Dad's steak seasoning

Red Wine Sauce Ingredients

  • 8 oz Sliced mushrooms
  • 8 oz Pearl onions
  • 4 Garlic cloves or minced garlic
  • 2 sprigs Fresh rosemary
  • 2 sprigs Thyme
  • 1 stick Unsalted butter
  • 1 tsp Dad's steak seasoning.
  • 3/4 cups Beef broth
  • 3/4 cups Dry red wine

Instructions

  • Start by pealing the the pearl onions, garlic cloves and mushrooms.
