Buffalo Chicken Sliders

With the big game just around the corner, these buffalo chicken sliders are the perfect party bite. Full of savoriness from the grilled chicken, creamy heat from the buffalo sauce and crispiness from the sweet slider rolls. Simple ingredients and only a few easy steps to make this delicious snack.

Grilled Chicken Tips:

  • Use chicken thighs for that extra flavor and fattiness.
  • Sear the chicken 5 minutes per side for an internal temperature of 175 degrees.
  • Make sure to rest the grilled chicken for 10 minutes before slicing.

Step 1: Grill Chicken Thighs.

When grilling chicken, my preferred cut are usually the thighs. They are more flavorful and fattier which makes them less likely to dry out.

Start with seasoning the boneless chicken thighs with a cajun seasoning or all purpose rub. Both are great flavors. Cajun will add an additional layer of spice, while the AP rub will keep it savory without the kick.

Preheat the grill to 375 degrees and set for direct heat. Place the seasoned chicken on the grates and grill 5 minutes per side or until the internal temperature is 175 degrees. The higher temperature will not dry out the thighs. Because of the darker meat, this is the preferred cook temp.

Remove the grilled chicken thighs off the grill and let the rest 10 minutes.

Step 2: Prepare the buffalo sauce.

While the chicken rests, time to prepare the homemade buffalo sauce. The ingredients are simple and you can adjust the level of heat unlike a store bought sauce.

In a saucepan, add a stick of unsalted butter, regular hot sauce, vinegar, Worcestershire sauce and garlic powder. Simmer over low heat until the sauce thickens.

To start, chop up the grilled chicken thighs into bite size cubes and drop them into a mixing bowl. Pour the homemade buffalo sauce over the top, add shredded mozzarella cheese and a handful of blue cheese crumbles. Mix the ingredients together.

Slice the original Kings Hawaiian sweet rolls down the middle without separating the individual buns. Spread the chicken mixture evenly throughout the bottom layer and sprinkle another generous layer of shredded mozzarella. Cover it all with the top of the bread and brush some melted butter mixed in with the cajun seasoning over the top of the buns.

Place it back on the grill for another 10 minutes to allow the cheese to melt into the sauce and over the chicken. Remove, separate and serve. Enjoy!

Ingredients

  • 2 lbs Boneless chicken thighs
  • 3 tbsp Cajun seasoning or All Purpose Rub
  • 1 pkg Kings Hawaiian rolls
  • 1 stick Unsalted butter

Homemade Buffalo Sauce Ingredients

  • 1 cup Hot sauce
  • 2 tbsp White vinegar
  • 1 tbsp Worcestershire sauce
  • 1/2 tbsp Onion powder

Instructions

  • Season the boneless chicken thighs with a cajun seasoning or all purpose rub
  • Preheat the grill to 375 degrees and set for direct heat.  Place the seasoned chicken on the grates and grill 5 minutes per side or until the internal temperature is 175 degrees. 
  • Remove the chicken thighs off the grill and let the rest 10 minutes.
  • To make the buffalo sauce, in a saucepan, add a stick of unsalted butter, regular hot sauce, vinegar, Worcestershire sauce and garlic powder.  Simmer over low heat until the sauce thickens.  
  • Chop up the rested chicken thighs into bite size cubes and drop them into a mixing bowl.  Pour the homemade buffalo sauce over and add shredded mozzarella cheese and a handful of blue cheese crumbles.  Mix the ingredients together.
  • Slice the original Kings Hawaiian sweet rolls down the middle without separating the individual buns.  Spread the chicken mixture evenly throughout the bottom layer and sprinkle another generous layer of shredded mozzarella. Cover with the top roll layer.
  • Melt a stick of butter and mix in 1 tbsp of cajun seasoning. Mix it together and brush the top of the Hawaiian rolls.
  • Place it back on the grill for another 10 minutes to allow the cheese to melt into the sauce and over the chicken.
