We take ground lamb and form into a 3-4 ounce ball and set it on a flat top grill. Top the lamburger balls with a pita and smash them down to form lamburger smash burgers. Once the lamb patties brown nicely, flip the lamb and pita over before seasoning the meat. Finally, top with tzatziki sauce, tomatoes, red onion and cucumber to complete this lamburger smash burger recipe. Just think smash burger meets a gyro and they have a baby.
My love of lamb here at GrillinFools.com is well documented. My favorite protein of all time would be those meat lollipops known AKA lamb racks. But don’t sleep on leg of lamb whether bone in, or boneless. Boneless leg of lamb also does really well on a rotisserie. I can’t recommend lamb shoulder enough. Just like pulled pork but it might be even better. Let’s get back to this one because it combines smash burgers and lamb, which are two of my favorite things.
Lamburger Smash Burger Recipe Ingredients
- 18-24 ounces of ground lamb (makes six 3-4 ounce lamb burgers)
- 6 pitas
- Salt and pepper to taste
- Greek seasoning (optional)
- Tzatziki sauce
- 1 cucumber, sliced or chopped
- 1 tomato, sliced or chopped
- 1/2 red onion, sliced or chopped
- Feta cheese, crumbled (optional)
What is a Smash Burger?
A smash burger is 3-4 ounces of ground meat pressed down into a thin patty on a flat top grill which allows for maximum browning and is perfect with the patty having crispy edges. The meat is usually ground beef but can be made with pork or in this case, ground lamb or lamburger.
Begin by setting the flat top grill to 500F.
While the grill comes up to temp, head inside and weigh the ground lamb into 3-4 ounce balls.
How to make this Lamburger Smash Burger Recipe
Place the balls of ground lamb on the wicked hot flat top and top each one with a pita:
Then, grab your smash burger press, in this case we used the Sasquash Burger Press, and mash those lamburger balls into super flat patties:
You can cover the pitas with a melting lid (or cloche) to soften up the pitas, although this is optional:
Now wait 3-4 minutes until we get a lovely brown flavor crust on each patty and then flip them over with a metal spatula/turner:
Next, season the lamburger smash burgers with salt and pepper and greek seasoning if you like (the latter is optional):
If your burger isn’t quite done, simply slide it over to one side of the grill set to low/medium low and cover with a lid and bake it for a couple minutes.
Then, top with tzatziki sauce, cucumbers, tomatoes and red onion:
Some feta could be added here as well.
Finally, remove from the heat and serve:

- 18-24 ounces Ground lamb

Prepare the flat top grill for two zone grilling with one side at 500F and the other side in the 250F-350F range
While the flat top is coming up to temp, measure out the ground lamb into 3-4 ounce balls. Please each ball on the 500F degree side of the grill and top with a pita. Flatten each lamburger with a burger press
Optional, you can cover the top of the pita/lamburger with a melting lid to soften up the pita and cook the meat more evenly
After 3-4 minutes, use a metal spatula to flip the lamburger smash burger and pita over. If the burger needs to cook a little more either flip it back over or slide it over to the cool side and cover with a melting lid.
Season the meat with salt and pepper and optional greek seasoning. Then top with tzatziki sauce, tomato, red onion and cucumber
Remove the lamburger smash burgers from the grill and place in taco holders
Serve immediately
