Shredded Beef Sandwich

This shredded beef sandwich is the perfect meaty, savory recipe I have. Full of tender beefiness, combined with the sweetness of the BBQ sauce and crunchiness of the peppers makes this the ultimate sandwich.

Step 1: Prep the Chuck Roast

For this recipe I used a chuck roast which is a very underrated cut of meat. It’s cheap, versatile and tasty.

To start, cut the large piece of chuck roast into small squares. This will help bring in more smoke flavor throughout the meat and help shorten the cooking length.

I used W sauce for the binder. Next, season with Dad’s All Purpose rub and Dad’s Steak seasoning. Both rubs combined provide a savory, BBQ, buttery flavor that works perfectly on beef. Make sure to get a nice coating on all sides of the roast.

Step 2: Smoke Chuck Roast

Preheat the grill to 250 degrees and set it for indirect heat. Place the seasoned chunks directly on the grates for 2 hours. This step gets smoke infused on the meat and brings color and builds a smoke ring around the edges.

Next, move the smoked beef chunks into a foil pan, add butter, bbq sauce and a little more Dad’s All Purpose rub Cover with foil and place it back on the grill for about 2 hours. It may take longer depending on the size of the roast or quality of meat. This stage of the cooking process will tenderize the meat, breaking up the fat and making the beef tender and juicy. To ensure the chuck roast is ready, check for fork tenderness.

Fork tender meat is key in achieving a tender and juicy roast instead of internal temperature.

Step 3: Assemble the shredded beef sandwiches


Shredded Beef Sandwich

Rest the smoked chuck roast for 10 minutes allowing the juices to redistribute.

Next, using heat resistant gloves, start shredding the meat. Please be careful here, the beef is HOT! Mix the meat in with the juices and sauce.

Toast up the inside of a mini french roll and 2 heaping spoonfuls of the shredded beef, some giardiniera and crispy onions on top and enjoy these delicious shredded beef sandwiches.

Ingredients

  • 2 lbs Chuck roast
  • 2 tbsp Dad's All Purpose rub
  • 2 tbsp Dad's Steak seasoning
  • 1 tbsp W sauce
  • 2 tbsp Butter
  • 1/4 cup BBQ sauce
  • 2 tsp Dad's All Purpose rub

Instructions

  • Cut the large piece of chuck roast into small squares.
  • Coat the chuck roast pieces with W sauce or binder of choice. Season with 2 tbsp each of Dad's All Purpose rub and Dad's steak seasoning.
  • Preheat the grill to 250 degrees indirect heat.
  • Smoke the seasoned chuck roast directly on the grates for about 2 hours.
  • Place the chunks into an aluminum pan and bbq sauce, butter and 2 tsp's of Dad's All Purpose rub.
  • Cover the pan with aluminum foil and put it back on the grill at 250 degrees for another 2-3 hours until the meat is probe tender.
